I really must get to grips with this meal planning, we don't have many takeaways, getting better like that, but I tend to have a list of what I have in my freezer and just decide a day in advance what we are having.

Today - Crispy pancakes, chips/croquettes, veg (c.pancakes were on offer and the chips have been in the freezer forever, so trying to use up).

For the rest of the month (seeing as I am 38 weeks pregnant, can't plan too far in advance), we have:-

    HM beefburgers (in freezer)
HM Spag bol x 2 (in freezer)
HM Chicken korma x 2 (in freezer)
    Omelettes
    Mini Kievs x 2 meals
    Hotdogs
    Roast Chicken
    Leftover roast chicken
    Kebabs (in freezer)
    Leftover lamb (in freezer)
    Roast Lamb (in freezer)
    Salmon (in freezer)
    Pork Chops
    Lamb Chops
    C. Pancakes
    Pizza
Chicken Breasts x 3 meals (need to decide what to do with)
Mince x 5 meals (again, need to decide and make into something)

So it actually looks like we have enough to keep us going, but I can't get committed enough to actually sit down and menu plan. Have to buy a few accompaniments (I base all my meals around meat as bf is a meat fiend) like nan bread for curry and maybe some more potatoes and veg.

I always seem to cook the same old things as well. Really I should trawl through the recipes on here, but I get embarrassed when I experiment and it goes wrong. We decided to try fish for the first time the other day, but bf decided he still doesn't like the taste of it (I cooked salmon) and the sauce I made to go with it was hilarious. It was pea sauce, but just looked so strange on the fish and potatoes. We were both sitting there laughing and I just wished I'd taken spaghetti bol out of the freezer. :o

Ok, here's mine for the week. My, how time flies!

Thursday: Chicken Saag Masala (jar of sauce - I can never make curry from scratch!) with a portion of rice and extra veg in. It made more than I thought, so I've a lovely huge portion for lunch at work tomorrow!
Friday: Homemade Lasagne from the freezer
    Saturday: Mini Mixed Grills
Sunday: Toad in the Hole (using the sausages not used in the mixed grills)
Monday: Homemade bacon, cheese and tomato pasta bake
Tuesday: Homemade Sweet and Sour Chicken, stir-fried veg and noodles
Wednesday: At mum's (I really do love my mum!)
    Thursday: Pasta all'Amatriciana

    Frugalswan xx

Well, I just sort of make them up as I go along but basically this is what I do...

-Peel and chop 1 large potato and 1 med onion into fine (ish) dice.
-Slowly fry off the onion in butter until it is golden and soft, meanwhile boil the potato until it's at 'squashing point'.
    - Add the potato to the onion and continue to slow fry.
-Dice the corned beef and add to the pan.
-Add lots and lots of pepper and worchestershire sauce
-Keep stirring and frying until the potatoes and corned beef are partially broken up.
-Roll out either some HM shortcrust or readymade puff pastry, use a saucer to cut circles.
-Place a dollop of the corned beef mixture on each pastry circle, use a bit of beaten egg to 'stick' the edges of the pastry together in a pasty shape and crimp the edge.
    -Brush with beaten egg
-Bake in a medium oven until the pastry in cooked.

Sorry if it's a bit vague Katie but I hope it helps, (they are delish and especially nice eaten warm with red sauce :D)
