Buttermilk what can I do with It....

    Thanks Pink-winged for re-directing me here..

    I was just reporting in another thread that I made pancakes yesterday with shop-bought buttermilk and they didn't taste any different. OH (who hates the taste) was totally fooled! The buttermilk was left over from this recipe which is gorgeous!

    Lemon drizzle cake:

    400g flour
    400g caster sugar
    4 tsp baking powder
    pinch salt
    250g butter
    284ml buttermilk
    juice half lemon
    zest of 2 lemons
    2 large eggs
    4 large egg yolks

    I make it in a large oblong baking dish (lined), recipe recommends 23cm lined springform. I also cover the top too (but maybe that's just my oven)
    1hr 15 mins at 180/gas mark 4 (but check incase it's cooking faster!)

    Then (I usually improvise this a bit) - 100g caster sugar plus enough lemon juice to make a watery syrup. Make a lot of little holes in the cake (cocktail stick/piece of spaghetti) and pour the syrup over. I then leave the cake to cool down completely in the dish/tin and turn out when cold.

    It's a really soft, fluffy yet juicy cake. I've made it for some special occasions - if you make the oblong form, you can cut it in advance into chunks and transport it more easily.

    ANyone have any ideas what I can do with 3 tubs of buttermilk which are fast approaching their sellby date? Small cockup with online grocery ordering :o

    It says you can't freeze it. Is that right? Also we're watching our weight so I can't do lots of treaty things. I've been sticking a bit in salad dressings but you know, can't really use up three tubs that way!

    You can make Irish Soda bread with it. It is really easy to make and you can freeze the bread.

  • Use it to marinade chicken - it makes it lovely and tender. I've put it over chicken pieces and then frozen it before with no problems. I think that if you just froze it as it is, the texture would be spoiled.

    maybe you could find a low fat scone recipe and then freeze the scones and have for lunches?

    I freeze my buttermilk as I get it in 1litre bottles. It freezes perfecty and I actually got 400 ml out yesterday to make soda bread today

    thanks everyone! I'm thrilled to know it freezes as i'm making coleslaw, cupcakes and buttermilk chicken in three weeks time for a wedding, all of which need buttermilk!

    I made butter out of my out of date double cream last night and ended up with 200ml of butter milk. I made a batch of scones with half and am wondering what to make with the rest.

    Any ideas? I still have some of the butter left too :D

    Alternatively does it freeze ok?

    I haven't tried freezing it,but I would imagine it would be fine.
    Otherwise, make some wheaten soda or soda farls. Homemade wheaten with HM butter........ yum,yum!
