Chicken pie?

  • Good evening all,

    Does anyone have a tried and tested chicken and leek pie recipe? Would like a change from the staek one I make, nice as it is sometimes a change is as good as a rest!

    The way I do it is like this:

    Pastry ( i buy mine, sorry cant help you make it im useless!)
    Milk
    Flour
    Cream
    White wine if you have any (- dont buy it specially!)
    leeks
    black pepper
    oil
    chicken/ turkey breast meat cut into appropriate sizes
    onions
    butter
    mushrooms ( I cant have a meal unles they feature!)

    First, clean the leeks then slice into chunky bits. Slice mushrooms if you are using. Chop onion.
    Heat oil in the pan and stir fry the chicken till lightly browned. put in the leeks, onions, wine, mushrooms again, lightly sautee, if its sticking add a bit of butter, the meat and veg should be pretty much half cooked by the time you take them out.
    Then in a seperate pan make a roux sauce using butter, flour, milk add the black pepper, when its looking ok , add the meat & veg mix, stir in some cream and leave it simmering on a low heat while you roll out the pastry
    Add the filling to your pie dish, put the pastry on- then bake for about 30 mins.

    Hi, I've made this on several occasions but I don't use the celery nor the sausagemeat and I only add wine if I happen to have an open bottle. It is just as nice using diced chicken breast, with red onions instead of leeks and with shortcrust pastry. It is very tasty and easy.

  • buy chicken peices frozen there not to badly priced in farmfoods cook them an then pull all the chicken off
    chop up the leaks an gently fry off
    add to the chicken with condensed chick soup
    i also buy my pastry also from FF im useless at makin it

    i add ham to mine i buy a ham shank from the butchers an cook there also pretty cheap as well just chop it all up an put all yhe mixture in to the pastry

    Hi all,

    I am wondering if anyone can help, I would like to make a home made creamy chicken pie. I dont know how to make the creamy part?

    I have made like creamy chicken before with pasta, but that sauce wasn;t thick enough..

    Does anyone have any help?
  • My mum used to make chicken pie regularly, and I still do occasionally. I make it by using leftover cooked chicken, some chopped cooked bacon and a tin of condensed mushroom soup. For some reason it doesn't taste right with condensed chicken soup!

    Just put the chicken, bacon (plus any thing else you fancy e.g. cooked peas or sweetcorn) into a pastry case and then empty the tin of soup over it. It is just the right consistency. Top with pastry and cook. So simple - 1 tin makes a pie suitable for about 6 people
  • i do the same as denise h, but i DO use condensed chicken soup- ( my kids don't do mushroom!!), gives just the right consistency of "sauce".:D
    Of all the things I've lost, I miss my mind the most..... ;)
