    Right. Don't laugh, I've never tried this before.


    I roasted a chicken today so have a lot of yummy leftover meat.


    I also made stock (I think) by boiling the carcass in the slow cooker on high for 4 hours.


    So, I have chicken and stock in the fridge (plus a bit of chorizo) that I thought would make a nice pie. I've never made pie before and if I google or look on here for recipes I can't seem to find a generic kind of recipe that I can adapt for my ingredients.


    Would anybody be kind enough to share theirs please?!

    As you have stock, you could thicken it with a roux, allow to cool, then mix the chicken and chorizo in the stock and make your pie.

    Or, you could save the stock for soup and mix the chicken with some mayo instead. Add any herbs, seasoning etc that you fancy.

    to me there are two sorts of chicken pie. chicken pie with sauce or chicken pie with gravy.
    for chicken pie with sauce
    you make a pastry case or 'lid'.
    you make a white sauce and add salt and pepper and fried mushrooms and onions. add your cooked chunked up chicken put in a dish add the lid and bake until the pastry is done and the filling is hot.
    for the other one - well, to me that is made with leftovers from Sunday lunch including the gravy! (any leftover mash is served separately - not IN the pie), just topped with some ready made puff pastry and baked!

    Theres loads of recipes out there.

    I made a chicken and ham pie out of leftovers recently using the method below.

    I would suggest, gently frying a chopped onion in a little butter (about an oz/28g)
    adding the chorizo, some dried herbs, such as tarragon.Then about a tablespoon of flour, beat together to make a roux and gradually add some stock and maybe a little cream/milk. Add the cooked chicken.

    Put the whole lot in a pie dish and cover with some rolled out puff pastry. Another trick here is to wet the edges of the pie dish and put strips of pastry around the edges of the dish, before adding the sheet of pastry. it makes it look like the pastry is hugely risen.

    For a simple chicken & gravy pie this is what I would do:

    Fry a chopped onion on a low heat until almost cooked., add a tablespoon of flour, slowly add the stock, then heat it through until it thickens and the onions are cooked fully.

    Meanwhile, while that is cooking you can prepare your shortcrust pastry, I use the pastry dough hook on my food processor and add 150g butter or half and half butter and lard, 300g plain flour, pinch of salt, 6 tablespoons of cold water, gently blend together until I get a ball. I then chill this for 30 minutes in the oven.

    By now I have chilled pastry, which I roll out, I make a bottom for my pie, by cutting around the outer edge of the pie dish, place that in a buttered pie dish (we use individual ones for the two of us), then !!!!! the pastry, add foil, place baking beans inside, then I bake at 200C for 15-20 minutes until no longer moist/soggy, then I add my filling (in your case the onions with the reduced/thickened stock and the chicken breast), top with a lid, brush that with egg yolk or milk and put the pie back in the oven for another 20-25 minutes until golden brown.

    Fry off an onion, add mushrooms if required
    Maybe other veggies could be added - some cooked diced carrot, a handful of peas or corn from freezer. Add diced cooked chicken
    Add a tin of condensed Mushroom soup, swirl out tin with a little water and add to require consistency.

    I'm rubbish at making pastry so always top my pies with either ready made puff pastry, brushed with a bit of eggyolk, scrunched-up filo pastry (my favourite0 or mashed potato like cottage pie.
