Ok, well I made some, they were edible but not great.
However, I think I know what the problem was.
Because I defrosted the mash it was a bit watery so I had to add loads of flour to make it into a dough like texture.
It was a bit bland too so I think I need to put more salt in next time.
After saying 'more' salt I'm not sure if I put any in there at all!
Salt is something I tend not to use a lot of, I usually add different spices and peppers to my recipes.
I think it will be a lot better next time if I use fresh mash.0 -
Pink-winged thats EXACTLY how my granny made them, but she used to cook them straight on the range top.
But in Roscommon, they called them potato cakes (but as you say, their are reginal variations).0 -

You need to make the potato bread before you want to eat it. It should be cooked (without butter or oil) over a gentle heat so it cooks through without burning. However when cooking it to eat, it's best fried quickly at your cookers highest setting otherwise it can absorb too much oil and go a bit soggy.
I don't think freezing the potatoes would have caused a problem. Perhaps you didn't add enough flour as there is quite a high flour to potato ratio? Just keep adding the flour until it turns into a stiff dough. It definitely needs salt as potatoes and flour are both quite bland tasting ingredients.

Pink, those look absolutely delicious.
In Scotland, we call them potato scones well, I call them tattie scones lol, and my kids love them. Im going to try to make my own today even though I have some I bought from the shops, its something Im always buying, and of course it wil be much cheaper to make them myself rather than buy them from the shops.

I've had another bash at potato cakes, this time adding a bit of butter and salt as advised. They were lovely, the salt and butter made all the difference.
Thanks for the advice.
My dog loved them, admittedly, he's not the most discerning diner!0
