Potato cakes

I was just wondering if anyone has a recipe for potato cakes. My mum used to make them When we were kids and I would love to give them a try because I remember them tasting so much nicer when I was a kid than the shop bought ones I get now.

She also used to make cheesy ones too which I've never seen to buy. I've asked her if she remembers how to make them but she hasn't done them in years and she's lost the book she had the recipe written down in :(

    I've made potato scones from the be-ro book

    recipe below

    Potato Scones Makes 12

    450 g (1 lb) floury potatoes peeled and cooked
    1 x 2.5 ml spoon (½ tsp) salt
    50 g (2 oz) butter
    100 g (4 oz) Be-Ro Self Raising Flour

    1 Mash potatoes, add salt and butter and flour to give a stiff mixture.
    2 Turn out on to a floured surface, knead lightly and roll out to a thickness of 1 cm (½ inch).
    3 Cut into triangles and cook on a hot greased griddle for 4-5 minutes on each side. Serve hot.

    thanks gizmos :) My mum used to bake hers in the oven (rather than griddle/fry them) and then re heat them under the grill when needed, do you think that would work with your recipe?

    think that they should be OK; I have been known to eat them raw before being cooked at all!!!!

    I always cook mine in the oven, they cook lovely.
    Now and again when in a hurry I've used a packet of instant mash,
    don't taste quite the same but the kids still love them.
  • Morning everyone. if you have picky kids, leftover mashed potatoes and 5 mins for prep here is a recipie. Currently in oven but i have made this many times.
    8oz SR flour
    1 tspn salt
    rub in 3oz of marge to above
    mix in 6oz of masned potato warmed ( in microwave is fine)
    2 1/2 Fluid oz milk

    roll out cut into rounds sprinkle with sesame seeds (optional but nice)
    cook on gas 8 for 20-30 mins

    By the way, I don't agree with Oscar Wilde (in your sig), surely you need to be more imaginative and creative to live within your means :D
  • Thankyou - these sound lovely and I know my kids will go for them - with some grated cheese in, too.
