    Thanks very much for the replies re: Thai Sauce, it looks perfectly acceptable to me and has no short life ingredients so I am going to use it. I have a new one but having read the threads on here recently I am trying to reduce the amount of food I throw so if it can be used from now on it will be.

    I know there are lots of long yoghurt threads but can anyone just tell me how to convert easiyo yog into fromage frais for my granddaughter ? Litttle one just hoovers up Petits Filous and if we could turn easiyo yog into something like it'd save a lot of £££££s. Thanks, friendly people.

    Just a little puzzle (to me anyway:D ). I've started making yoghurt in a flask and on Saturday bought a couple of pints of whole milk that were reduced and made yoghurt with them on Saturday night/Sunday morning. Now the use by date was the Sunday so how come the yoghurt hasn't gone off? (I've just had some for lunch btw and haven't keeled over yet!) Does making it into yoghurt somehow preserve it?:confused: . Or maybe the use by date was a bit conservative. Some clever person with a degree in Science may be able to help;) .

    You've introduced a particular bacteria to your milk in the yogurt (which ferment it in an edible way ;) ). The making of yoghurt results in release of lactic acid, which increses the acidity, so harmful bacteria can't get going. This is a way of preserving the milk a little longer.

    Plus the 'use by' date is usually on the conservative side, IMO. Sometimes milk is 'on the turn' by its last day, but if it's not been left out anywhere warm (!) then it's usually good the day after it shouldn't be, IYSWIM.

    Milk left in a jug on a table by a radiator over the weekend gives a fair impersonation of yoghourt, which I don't recomment. :rotfl:

    can you put any fresh fruit into a jelly and it will set?
    i am sure once, the jelly would not set and i blamed the fruit - but cannot remember which fruit it is!!

    Fresh kiwi and pineapple have an enzyme in them which breaks down the gelatine protein in the jelly, so it doesn't set. Tinned fruit is cooked, and the enzyme degraded, so will be fine in the jelly ;)

  • thanks for that Penelope Penguin, i had a feeling it was pineapple that i tried once in the jelly and wouldn't set, but couldn't be sure.

    Hi ladies, and gents!

    I have 2 questions,
    1. I have an unopened pack of sausages in the fridge, Use By Date is 9/1. Will these be ok? They look ok but to be honest i'm a bit scared of opening them incase they smell :rotfl:
    And 2. I made my first HM soup today (YAY) however it went a bit wrong as i was doing half quanities of the receipe which was going fine until i forgot and pout the whole lot of cream in instead of half :rolleyes: so was more like a sauce than soup! Anyway, should it be ok to put in the fridge and if so, how long will it last for in there? I am planning on using it up tomorrow with some chicken (curried apple 'sauce' and chicken, should be interesting).
