Would I be right in thinking a Creme Catalan is a Creme Brulee but with cinnamon and lemon zest instead of vanilla? If you lend someone a tenner and never see them again, it was probably worth it.0

Trust me, they ain't!
I have had the pleasure of eating Creme Catalan in the Catalan region of Spain, and it is noticeably different. There's definitely some cinnamon going on.
Oh well, I guess I'll invent something and see what I get.
Do cinnamon sticks go off? Mine are BBE 2009, and don't smell of much. Still, they're all I've got...If you lend someone a tenner and never see them again, it was probably worth it.0 -

Well, they don't smell bad, just not very cinnamonny. I think I'll use two instead of one.If you lend someone a tenner and never see them again, it was probably worth it.0 -

But instead of vanilla I'm using two cinnamon sticks and the zest of a lemon.

if you crack a cinnamon stick in half you will get a better sense of the aroma possibly? I remember someone saying that helps release the flavours. How true it is , I'm not sure but I do it anyway!A little nonsense now and then is relished by the wisest men
