    Zippy - you're not just a pretty face are you? Do you think it will be ok if I do it in a loaf tin an whack some lemon icing on?

    Yes, you will need to adjust the cooking time - normally a carrot cake in a 2lb loaf tin takes just over an hour if full to the brim. See how much of your tin you take up, and then check after say 20 mins - not too often, using a skewer- im sure you know how to check if a cake is cooked!

    Lemon icing - mmmmmm

    You could probably use the mix to make fairy cakes, or put it in a brownie dish and made sponge slices if that makes sense. What ever floats your boat.:j:D

    or you could throw some lemon zest in the cake, and make a drizzle on the top - so make it into a kind of lemon drizzle cake?

  • No, don't cook a fatless sponge in a loaf tin, it won't cook properly in the middle and will burn on top :(

  • I don't know the exact science, but just because of the length of time it will take for the middle to cook, the outside will be overdone by then - Its really not the kind of cake that should be dense. Oh, that gives me an idea, what about a swissroll?

    Oops too late!

    My oven never quite gets up to temperature so maybe that will be a blessing for a change!

    This is the third thing that I have made for this friend to say thank you for looking after my cat... the first was a chocolate cake which stuck to the tin but was yummy... the second was fudge... which I made with rice milk so while it tastes yummy it looked very amaemic and odd... and now it is going to be the burnt/raw sponge... which I don't have any butter to make icing with!

  • It will be lovely with lemon drizzle - you could always pop in into the microwave to finish the middle if it doesn't cook ;)
