Can you help me come up with a meal (to serve just one person) from the following items in my fridge please? Or more than one meal?
I've got a pretty full storecupboard so I do have the basics like rice, pasta etc. Also have some veggies in the freezer. I haven't got any potatoes in at the moment though. Or bread.
Ok so contents of fridge that need to be used up
3 carrots
tiny piece of mature cheddar (its about 1oz, which to me is small for cheese
2 onions
1 pot of ready made pesto
A couple of tablespoons of soured cream still left0 -
If it's not too late, and you've got tinned tomatoes, chop the carrots and onion into small chunks, throw them into a pot with the pesto, tinned tomatoes, appropriate amount of rice and enough water to make it sloppy, bring to boil, transfer to casserole, dice your cheese and stir in, then cook in oven for about 40 minutes. Stir your soured cream in at the end.
I'm doing this from memory, it's an instant adaptation of a recipe called Cheesy Red Rice which I found via MSE although it was on another site, and I can't find it now I'm in a hurry ...
Let me know if it works ... and I'm very sorry if it doesn't!
Just found a link for its version on MSE (although I know I found it somewhere else!) and the version I use definitely adds veg, and doesn't use as much cheese. I am hoping the pesto will add the flavour you won't get from the cheese, IYSWIM.Signature removed for peace of mind0 -

Bear in mind that MATH and I are both cooking for more than 1. You might not want to use all 3 carrots and both onions, but you could just chop your 'spare' onion and freeze it ready for next time! And if you're cutting down on the rice, you might want to use just the tinned tomatoes and not add too much extra stock, or you'll have enough to last you the week ...
I made it yesterday, reduced the quantities all round and it was lovely! Very filling and just nice for an autumn day.
I've got 2 carrots and an onion left but they're still ok and will be going into a stew on Weds after I've been to the butcher.0 -
HI I have had a scout around, but other than gingerbread I am struggling to find recipes for biscuits you roll out and cut.
I have an annual get together with the girls, theyre not old style or craft, but they love coming round and doing a xmas craft for one night!!
This yr they have requested to do biscuits, one of the husbands wants dinosaurs (ebay here i come).
I am thinking if I make the doughs, they can roll them out and cut them.
I am definitely going to have to clean my oven before they come lol.

We're eating our way to the bottom of the freezer and I thought I might make Bacon Pie from the recipe index. I need a can of condensed soup but only have a normal cream of chicken one. Will this be OK or too runny - I thought I'd miss or reduce the thinning down with cream bit out.I have plenty of willpower - it's won't power I need.
