Extract tends to be stonger (as it is extracted from vanilla pods). Essence is manufactured, and tends to be weaker ;)

Thanks for the help with the chilli jam! I know how hot scotch bonnets are... I wanted it spicy. Nigella states it's not too hot in her quantities! I purposely added it to give extra kick :) I think it is gorgeous - but will let you know what my brother thinks later! It's not actually offensively hot (for my taste buds anyway) :D

Any tricks to freezing cooked jaket potatoes so they dont end up having a 'weird' texture after defrosting? I usually take one one the night before, would defrosting it straight in the microwave help?

If you are cooking more than you need in order to freeze them, I don't know if it would be worth not quite cooking the jackets before you freeze them? Obviously you can't do this with 'accidental' leftovers, and other people may have better suggestions.

Mind you I think microwaved jackets are nowhere near as nice as oven baked ones, so if you're used to oven done then microwaved may never be the same.

I'd do pineapple upside down pudding with the pineapples, and banana bread with them, but the latter isn't hot.

Didnt want to clog the board, so thought I would hijack this one.... I'm sure there was a lunch ideas thread ages ago, with tons of fab ideas. Can't find one just for bringing lunches, just ones for everyone (like me) trying to save money.
    Thanks
