    Hi Jodie,

    It will be fine to halve the recipe but adding half an egg can be tricky so I'd just use a small one instead.

    I'll add this into the quick questions thread later.

  • The egg's the problem when it comes to halving the ingredients. So, what I'd do is make up the full amount, use half the mixture to fill your 6 cups, bake. When you've removed the muffins and washed the cups use the rest of the mixture to make another batch. Store the extras in a plastic bag in the freezer. They can be defrosted individually in the microwave on high for 30-40 secs, or just leave them on the work top for an hour or so.

    Would you be able to use cups/mugs instead of plastic basins CakeMaker? Then re-wrap as Savvy suggested? That would make them easier for people who would prefer to micro-wave the pud too...Mind! This is only a 'thinking aloud' & not speaking from personal experience :eek:

    Okay I have a 'stoopid question of the day'.

    When making fudge- once you've reached the required soft ball stage, the recipe calls for 'beating the mixture'. So can i use an electric mixer or is there a special way to 'beat' as opposed to mix?? Thanks!

    I just beat really hard with a wooden spoon. It does not take long to get to the glossy stage required for setting. (Ooh I want to make fudge now!). I have never used a mixer.

    Do you have a cake tin- the kind with 12 holes ? If so you could make 6 normal sized muffins plus 8 small cake sized ones. I used to do this before I treated myself to another 6 hole muffin tin and a 12 hole mini muffin tin.
    Just a thought.

    Fishcakes - I've got the leftover mash mixed with the tuna. Do i add the egg into the mixture, or just dip the fishcake into the egg before dipping into breadcrumbs? Can't remember!

    Also I always have problems with my fishcakes falling apart - what can I do to help?
  • I think you just dip them in egg then flour or breadcrumbs. Sorry, can't help with them falling apart, unless your mix is too wet?

    Thanks TVT, it could be - I use leftover mash so there's aleady milk and butter in it and its creamy. They taste just as good fallen apart anyway :grin:

    I thought the egg was supposed to help with binding fishcakes and the like together? :confused: And they'd fall apart if too dry, not too wet.
