Microwave Sponge Pudding
Here's a quick and easy sponge pudding that can be knocked up in a matter of minutes and zapped just as quickly in the microwave for those "must have now" comfort food moments
The following quantities are plenty for 4 people and I often halve this to make a smaller version for 2 and cook for a minute or so less
Ingredients (basic sponge)
4oz (100g) butter/marg
4oz (100g) sugar
2 eggs, beaten
4oz (100g) SR Flour
2-3 tbsp milk
Beat butter and sugar together, add beaten egg, fold in flour and add sufficient milk to dropping consistency. Pour into buttered microwavable bowl, cover with cling film, leaving small gap for steam to escape, and zap for 3-4 minutes on HIGH (based on 800W) ... leave to stand for a couple of minutes after. BE CAREFUL REMOVING CLING FILM AS STEAM WILL STILL BE PRESENT!!!
Variations:
Syrup sponge - place 2 tbsp golden syrup in bottom of bowl before adding pudding mix.
Ginger sponge - add a tsp of ground ginger with flour (nice combined with syrup!)
Chocolate sponge - replace 1oz/25g of flour with cocoa powder.
Spotted !!!!!! - add a handful of sultanas/raisins to pudding mix.
Upside down fruit sponge - add slices of pear, apple or pineapple etc (peeled and cored) in bottom of dish before adding pudding mix (pear is nice combined with ginger, cinnamon with apple, or even syrup too!!! YUM!!!)
Jam Sponge - place 2 tbsp jam of choice in bottom of bowl before adding pudding mix.Lemon Sponge - add 2 tbsp lemon juice in place of milk and grated rind of half a lemon to pudding mix.
I'm sure you can all think of lot's of other variations you can do too, adding fruit/spices etc...

Made this tonight as a last minute idea for pudding.....DH ate nearly the lot:eek: He is a true cherry hound. I put cherries in the bottom and pudding on top and after it was baked I drizzled it lightly with some amaretto. I got a bit and hubby ate the rest.

I have this recipe in one of my bread making books that I keep hanging my nose over -but as hubby doesn't have a sweet tooth -I haven't made any yet..oh and the calories would be :eek: ..and not the most "weezle-esque" reipe either -but I will post it, if only for you to torture hubby with
CHERRY AND CUSTARD FOLDOVERS- 1 cup tepid water
- 3tbs dried skimmed milk
- 2 eggs beaten
- 2tbs caster sugar
- 1/2tsp salt
- 3 1/2 cups white bread flour
- 1tsp yeast
- 250g unsalted butter :eek:
- 1x 425g tin black cherries -pitted and drained - could use your frozen
- 1/2pt ready made custard -could make your own
- 1 egg beaten
- icing sugar to dust
- place 1-7 in BM in order specified by your machine and set to "dough"(you could soon knock it together by hand)
- Place the butter between 2 sheets of greaseproof, and whack into a square approx 1/2" thick -cover and chill
- when dough is ready transfer to a floured surface and knead briefly
- roll out so its approx 3/4" wider than the butter, and half as long again
- now treat like making puff/flaky pastry -folding and rolling 3 times(there is loads of blur explaining this so I can repeat it for anyone unsure
-just didn't want to bore you all :rotfl:
- roll into to a thickness of about 1/4"
- cut into oblongs approx 10cm x 15cm (4"x6")
- divide the cherries n custard between each piece -placing on 1 half.. leaving a border
- brush the edges with egg and fold over the remaining dough and press down to seal
- place on a lightly greased baking sheet allowing room for swelling
- cover loosley and prove for 30 mins
- place in a pre-heated oven - 200c/400f/gas6
- brush with beaten egg and bake for 15-20 mins
- dust with icing sugar and serve..

have finished all the calculations on the family (cooked/main) meals for September..... and I'm definitely still heading in the right direction cost wise
June - average cost per head per day - 76.116p
July - average cost per head per day - 68.543p (reduction of 9.95%)
August - average cost per head per day - 65.683p (reduction of 4.17% on July, 13.7% on June)
September - average cost per head per day - 61.647p (reduction of 6.15% on August, 19% on June)
And I'm off to a good start for October.
Did Chille Con Carne tonight, and I've calculated I'd normally stretch the meat part to 4 portions at a cost of 31p each.
But tonight I used 250g mince instead of 350g, then lobbed in 50g of green lentils, increased the onions from around 110g to 154g, added half a green (whoopsied!) pepper, and threw in a second tin of Kidney beans. (Due to the lentils I also had to increase the water from .25pt to .75 pt.) This has served 3 of us tonight, and left me as much again to put in the freezer for some time next week..... and reduced the cost to just 21.6p a portion :j By the time I add on the cost of the rice and the (special offer) garlic bread, tea tonight came in at a meagre 41p each
So I've a day with little cooking to look forward to, and it means no 'odd' portion of something in the freezer (or to be used up within a couple of days on a jacket spud for lunch, which is what I seem to have been doing recently) :TCheryl0 -

ooooh now that sounds yummy!! Maybe if DH is a very good boy and work does not try and do me in this week, perhaps I may make those very soon:D

Productive morning so far here...
Have a cherry pie in the oven, which should make DH very happy this evening.
Have managed to get some cleaning done and about to throw a load of wash in.
Even managed to get some work done as well....
Here is hoping the rest of the day goes just as well for a change!

Been a busy couple of days down the allotment for us and haven't managed much cooking (thank god I got that slow cooker last weekend!)
Had chicken curry (in slow cooker lol) last night and some raspberries from the garden for dessert.
I think it's going to rain tomorrow (my day off too) so plan to do some batch cooking and get all the housework up to date (been neglected this week too!)
Thanks to all of those who have posted recipes over the last few days :T - my 'recipe folder' is becoming larger by the day !
Have sausages tonight (quite fancy sausage, egg and chips :drool: ) but toying with the idea of a casserole in the slow cooker (think i'm going to get my money's worth out of this gadget !)
