We had the offspring's stuffed peppers for dinner last night--I did all the prep bar the peppers, but they still said I'd had dinner 'cooked' for me! Anyhoo, this recipe was on the back of the packs of peppers from MrA SIZE=1]3 peppers in a pack for £1[/SIZE

    Pepper slaw
An interesting and healthier take on a salad classic. If coleslaw was Italian this is how they would make it. It has crunch, colour and is full of flavour.

*1 red, 1 yellow and 1 green pepper deseeded and sliced into strips
4 spring onions or 1 red onion sliced into strips...............Pinch of sea salt
15ml balsamic vinegar............................................Twist of black pepper
40ml olive oil......................................................4 torn basil leaves
    Pinch of castor sugar

Make the dressing by whisking the olive oil and balsamic vinegar together.
Add the sea salt, castor sugar and black pepper and check the taste before using. Thinly slice the peppers and onion. Add all together and allow to marinate for 1 hour to soften the peppers.
Tear the basil and add to the slaw.

*Can also be made with the mono colour peppers.

Hope you enjoy it, & thought it might be of use to the expectant mums who can't have mayo.

sounds nice and we have some peppers left from garden!!

    confused by last bit?

I undestood it was just homemade mayo pregnant women shouldn't eat because of the raw egg

Most shop bought stuff is just a concoction of chemicals and doesn't contain raw egg ......does it??

hubby was warned off mayo while on his chemotherapy -- and that included the shop bought stuff !!!

if you watch the ads for one particular make it says it includes nothing except oil, vinegar and free-range eggs!!

    Good Morning everyone.

Trying to think what to put in the slow cooker today for tea or whether to even bother now!

*kicks her comp across the room* horrible text wrap *grumble* wont work *grumble* three hours *grumble*

Ok rant over, not having a good work morning obviously.

Sending hubby to the butcher, Mrs M, think will have him try the one in the market that you suggested! do have lots in but really fancy some stew or something along those lines. So after some cheap cuts of meat. Also have MIL staying with us this weekend so have to cook things that dont involve sausage or mince or cheese

Feeling rather frustrated today which is why a good idea that I dont go to the shops myself today, tend to comfort buy at times and just cant be doing that! Then need to work out what going to serve MIL for food all weekend. anyone got any suggestions please?

back to work I go, to sort out a what I am sure is going to be a very simple solution to this wrap problem, sure will kick myself later and shout doh! when I figure out why it is misbehaving!

Have a great afternoon everyone, huggles to those that want them.

What sort of things does she like? Maybe you could just enter some of her favourite foods into the search facility and see what comes back?

Great idea! Why didn't I think of that!

Am thinking, some sort of beef casserole on Friday, roast chicken on Sunday, Saturday is iffy, as may be going out, if she fancies going that is. Then for lunches maybe soups and hm bread rolls.

Can certainly tell it is getting colder outside, really fancy warm, cozy comfort foods now!

Well finally beat the word wrap crisis and boss loved the new pdf....so result and now can breathe again. Just have to start the next deadline project!

Well DH went to the butcher and came back with some lovely beef shin and two huge chickens. Will be eating chicken for days. lol. Having one roasted with salad for tea and then think will make a chicken pie for tea tomorrow and freeze the rest. Will roast the other one on Sunday when MIL is here for the weekend and am sure to have tons to freeze again!

Want to do some baking, but not sure what I want to bake, something quick and easy, perhaps some banana bread as I have several packs of mashed banana in the freezer.

DH loves cherry pie so thought would make a pie tomorrow for pudding and can do that after he leaves for work in the morning and before I start work here. Have stacks of frozen cherries now as asda selling them for £1. Anyone know if I can just tip the frozen cherries into the pie or should I let them thaw a bit first as I dont want it to be too watery with the pastry?

Thank you in advance........back to work I go for a bit! Will be glad when this day is over.

I would thaw the cherries, then you know how much juice you'll be dealing with. If you tried to bake them frozen, I fear they would either not cook before the pastry had burnt or give off so much steam, the pastry would go soggy. I may be wrong.

One of my fave things to do with frozen cheeries is thaw them (obvs!) and then put a layer of them in a cake tin, cover them in sponge cake batter (with plenty of spice in) and then serve this hot as a pudding (will need a little bit longer in the oven than normal cake). V nice in winter with custard or single cream.

    Hi munchki

would defrost them in a sieve first... if you do it over a bowl you can thicken it with arrowroot if you have some then add to the cherries..
Mum was on about earlier that you can sprinkle a little semolina into the pastry case when cooking fruit pies -so that it will thicken any liquid :D
    -6 -8 -3 -1.5 -2.5 -3 -1.5-3.5
  • munchkin -I thawed them and cooked with a bit of apple which soaked up a lot of juice

i always use an old delia trick for fruit pie a thin layer of semolina on the bottom before putting the fruit in................it absorbs any excess juice then disappears ...honest am going to make cherry and apple jam next with mine

Just what we need more jam !!!

did think of a steamed sponge with a cherry and syrup top or is it bottom i used to have a microwave sponge pud recipe but have lost it

Lots of cousework today so not much home craft going on here

cheesy bacon, leek and mushroom pasta for tea ........................2/3 meals this week pasta ................no complaints yet

Did a nice mince lamb curry last night with lentils and oats added of course was yummy

whoops took so long posting mrs mc gave away my delia secret !!!! LOL
