    Morning all :)



    a bit more about managing a food health and beauty budget at £1 each per day...

    A one day example from Weezl towers:

    drinks

    1 large cafetiere of coffee- 12.5p
    approx 1/3 pint full fat milk- 12.6p for both of us in tea/coffee
    2 tea bags- 1p

    26 pence


    breakfast

    Acetate monkey - toast, 2 slices-3p plus marmalade 1.5p plus olivio 2p and 60g porridge 3.6p plus golden syrup 1p per 10g spoonful 10.1p

    Weezl - 2 eggs and 2 slices toast 22.5p

    Total 32.6p

    Lunch

    Weezl- Soup 11p
    Acetate monkey- Sandwich and boiled fruit cake 15p

    total
    26p


    Dinner

    pasta pesto 19p per portion

    total 38p

    Grand total £1.23

    ISOM stamps foot...wheres images of gorgeous fergs in nappies! Am at w*** eating my two smart price pitta and HM soup which has a bit too much curry in it!! Weezl please tell me that the already chopped veg was cheaper than normal!

    Now then ISOM, sian is v impressed that I am managing to make batches of food and do all the maths and budgeting whilst also having a little fergus..... so I think you can allow me a special dispensation for letting Mr Asda peel, chop, and wash a kilo of root veg for me, specially when he only charges me about 5p for the priviledge!!!:p;)

    And what does a skinny acetate monkey have for pudding?

    Boiled fruit cake, very lovely and moist, not a dry crumbly cake at all….

    dried fruit 875g £1.13 (I tried to get away with- 580g) 75p
    sugar 375g 35p
    margerine 250g 29.5p
    1 teaspoon mixed spice
    1 teaspoon bicarbonate of soda
    8 fluid oz water
    Boil together for 1 min, cool
    Add plain 250g and 250g self raising flour 14.5p and 2 eggs well beaten 20p.
    Bake in 7in sq or 8in round for 1 1/4 to 1 1/2 hrs at 350 or MK3
    2x 2lb loaf tins works as well, takes less time in a loaf tin. Done when skewer comes out clean.


    I'm just testing how it is with less fruit now, should be done at 4 pm so I'll post a verdict ;)

  • Recipes as mentioned. Hope someone likes them!


    Curried bean spread
    • bunch of spring onions chopped
    • 15oz can of chick peas
    • 15 oz can of flageolet beans
    • 4 oz of low fat cottage cheese
    • 3 oz of low fat fromage frais
    • 1 tsp english mustard (ready made)
    • grated rind of half a lemon
    • splash of lemon juice
    • curry powder to taste
    • small pinch of chilli powder to taste
    • salt and pepper
    Put in the blender and blend til almost smooth depending on how you like your spreads.


    Vegetable spread
    • One medium onion, chopped
    • 1 stick of celery chopped
    • 2 - 3 oz of cucumber. Remove skin and chop
    • 3 oz green pepper deseeded and chopped
    • couple of gherkins chopped (leave them out if you don't like them but they do give a nice tang to the flavour without tasting too much like gherkin)
    • 3 oz cottage cheese (press this through a sieve first)
    • 5 oz chopped fresh tomatoes
      salt to taste
    • I sometimes add a slug of tabasco if I want some fire but it's nice without.
    If you like a coarse spread, just mix everything together, if you like it smoother then blend. Chill well before eating.


    Cucumber and cheese spread
    • 8oz of cottage cheese
    • 1 tsp lemon juice
    • dash of tabasco
    • half a small onion, grated or two or three spring onions finely chopped
    • 6oz cucumber, peeled and finely chopped
    Mix together and cover and chill in the fridge for about an hour. This makes a soft spread.

    Hi Diva,

    Just wondered how many sandwiches those spreads would make. Also how do you store them. I'm thinking about the cucumber one, but i'm worried it might go bad before I scoff it all!

    Yes it tastes lovely,:D

    I also substituted garam masala for the mixed spice, and I've just asked Acetate monkey if it's got a nice spice blend, and he says yes all lovely and christmassy!

    Without the extra fruit, you need to leave it in the tin until completely cool so it doesn't fall apart! But still a bargain, 5p a slice :money::money::money: Let me know how it goes if you make it...

    p.s. a more likely acetate monkey sized portion is one 8th of a 2lb loaf tin, so that's just over 11p per pudding!:eek:;)
