Having heard about the American idea of doing fried green tomatoes - I looked up a recipe for any of mine that dont go red. I havent tried it yet to know what its like:
2 quarts water
2 tablespoons salt
1 cup flour
4-6 medium green tomatoes (sliced)
salt to taste
vegetable oil or bacon grease for frying
- Mix salt and water.
- Soak the tomatoes in it 30 minutes.
- Drain.
- Drop a few slices at time into a bag into which you've placed the flour.
- Shake thoroughly to coat.
- Heat oil in large frypan.
- Place the slices in hot oil.
- Brown till crisp on both sides.
- Salt to taste
(can substitute squash, courgettes or aubergine in place of the tomatoes if wanted).
Come to think of it - that has reminded me - so I might give it a go later..:D0 -
