  • I cook loads of rice at one time and any left goes in the freezer. As for the fridge I wouldn't keep cooked rice for any more than 2 days x:j
  • 2 days in the fidge! As I feared! Best whack it in the freezer when I get home. Thank you

I know you will all think I'm mad but I eat take-away rice the next day and I sometimes (ok, mostly) eat it cold from the fridge (I know, I know) and I have never had problems.

I do cook rice just to freeze it though and I just cool it down and freeze, much like others have said.

  • The reason I ask is that sometimes I get home from work late and just want a quick and easy meal - i.e bung something in the microwave for 5 mins rather than slave away in the kitchen for ages. I like those express 'microwave in 2 mins' rice portions, but they are a bit pricey, so I want to know if it's possible to cook a batch of rice, then freeze it in portions so I can leave to defrost in the morning to have for dinner.

While we're on rice, anyone got any ideas how I can jazz it up? The other day I was out of pretty much everything because I had been ill, but didn't fancy just plain rice! What would go well with rice to turn it into something amazing?

I do, but you need to cook and freeze it immediately, and leave it in the fridge to defrost - you can get some really nasty bugs from cooked rice that has been left out overnight.
(My recent food hygiene course scared the life out of me.)

Pedant alert - it's could have, not could of.

i do, *but* i use the rice as part of egg or special fried rice when i do this, and essentially cook from frozen. (i bang the bag against the worktop to break it up). I also don't overfill the wok when i do this. So far we're still alive, although whether more by accident than design, i don't know!

if you want a recipe for special/egg fried rice, i can give you that. Its pretty easy to cook, its the chopping up part that takes ages, but in theory, you could do this the night before you go to work..
