cooking with cider

My OH loves cider and we always have tons of bottles of strongbow and cans of cider as well as bottles of home made cider he buys from the local market.
I've seen a few recipes like casseroles with beer and beer battered cod and so forth... does anyone know if there are any recipes I can use that involve cider? And does it keep the flavour?
Thanks!0 -
Pork is very nice cooked in Cider - i'm sure there are lots of recipes on the web for this.0

When you roast pork pour some over when cooking its lovely. Also v good with sausages and mash slurped in the gravy. Turkey with a creamy sauce and cider is good too. I tend to use it with pork mostly making up the recipies as i go along!0

Pork casserole would be ideal, and maybe add some apples towards the end of cooking so they don't go too mushy......in fact, I think I might try it myself as I love Magners Irish Cider any excuse....hic!!!!!!!!!
Thanks for the inspiration!!0 -

Delia Smith's 'Frugal Food' has some cider recipes in that sound nice.
I also have somewhere a cookbook by Gail Duff that has recipes in with pork and cider. When I can find it I'll post the title.0 -

For OH I do pork steaks with apple slices in cider, bit of grain mustard ......then when all is cooked add some cream, but more often than not, substitute Greek yoghourt or fromage frais, as usually have one of them in the fridge.
Brown pork steaks (or chops) on either side - set aside.
In same pan put in apple slices (you just cut apple into quarters, remove core and slice, no need to peel), cook on either side for a few mins - you could omit this stage really.
Put pork steaks into ovenproof dish, throw in apple. I use ham stock from freezer, but ham stock cube dissolved in just a little boiling water would do fine, add some grainy mustard, then add some cider - enough to cover the pork. Put lid on dish and place in oven for about 45-60 mins.
This is easily done in slow cooker, but reduce the stock/cider.
Put some of gravy from casserole into a jug, slowly add cream or whatever, whisking so that it doesn't separate. Then I just bung it all back into the casserole giving a wee stir about. (Think the idea is to take the pork out of the casserole, whisk cream in then replace pork - I am just too lazy!)
Anyway, seems to go down well. keep getting asked to make it again :rolleyes:0
