I made a huge curry in the crockpot today - chicken, chickpeas, sweet potato, frozen spinach, tinned tomatoes, creamed coconut, korma powder, cashews, tinned pineapple, splash of orange juice. It cooked all day and is smelling divine now it's cooling down for the freezer.0

Just tried the chicken korma (used quorn instead of chicken).
Used red onions as they were on offer for the base sauce and had a very nasty moment after stage one which turned an inky black colour, adding the passata sauce made it a rich brown colour though (phew!!).
I couldn't find any coconut cream so used the full fat coconut milk.
OH was horrified at the amount of onions in the base sauce as he dislikes onions both cooked or raw.
It was absolutely delicious, myself, husband and younger daughter loved it, the sauce was lovely and creamy but not too coconutty and there was no strong taste of onions, just a yummy curry taste
I can't recommend this recipe enough.

Curry Queen I have to say, your name is very appropriate. I made the base sauce last week and froze in batches, and I had chicken korma and pilau rice for dinner the other night- it was absoloutely gorgeous.
I used to make baltis and kormas using the pataks paste, and they didnt taste too bad, but this korma was totally divine, and I didnt realise that pilau rice was so simple to make.
You are most definately MY curry queen so thank you very much2011- new year, new start.
