    oh i liek the look of has anyone tried it and had great sucess? also will it matter if i just use table salt, and i thought you were suppose to add abit of sugar to dough (like today i put a spoonful in my pizza)

    I didn't use sugar but I only had instant dried yeast which says on the packet to add it to the flour rather than the liquid so did that (and salt as well but not as much as recipe recommends) then made a well and added the water. Didn't rise much during the 40minutes resting time but rose like a small football in the oven - more so in the rayburn than when I used the electric (fan) oven. (Have noticed this with cakes too.)

    Have just made a half and half wholemeal/white version with possibly too much liquid as mix seemed a bit dry initially so added more water (wholemeal flour absorbs more water) so made a flatter bannock but still a good texture and was polished off with soup at lunchtime by four hungry workers who are normally white-sliced men! So now have to stick another in the oven!

    see i was gonna make the nice looking bun for with our soup tomorrow lunchtime, i could do it tonight and keep it in the fridge til midmorning but i'm pretty sure my yeast says you put it in water for 15mins or until it's frothy i never do thats

    also i hate this whole one cup things how many grams is that? i think i'll try it and see if it's naff the dogs can have it

    Quintwins, I looked it up and according to my muffin recipe book an American cup is 240mls and everything is measured by volume.

    Thus 3cups warm water = 720mls
    6.5 cups flour = 1560mls. I weighed this and made it just over 1kg (approx 1090g) strong white bread flour - not very precise but was faffing about with an ordinary measuring jug.

    I used two sachets of instant yeast the first time (which packet reckoned would do 1.5kg flour for standard bread recipe) but is still less than the 1.5tbspns in the artisan recipe. Second time I used one sachet yeast, 750gms flour and "enough" warm water to make a slack dough. Both worked fine. (Both times used much less than 1.5tbsns salt.)

    Thanks competitionscafe. Sazbo mentioned it earlier too and I am very tempted but trying not to spend more money! Oh, what the heck? Have ordered it - I did have a £5 Amaz0n voucher - will look at it carefully and then give it to DD or someone later as a present!

    Oops, sorry I missed that post from Sazbo - I see it now though. Getting a £5 amazon voucher next month as well so will also be very tempted to get it too. :) Don't think I can wait for the paperback version (if they even print one) - and I guess it is only £3.79 if I use my voucher, so do let us know what you think of the book.

  • If this is of interest, The Book People have the uk book (Five Minute Bread) for a good price, 4.99 plus 1.95 pp. Was slightly worried it was not the right edition for the uk, because it seems to have been available from TBP before the Amazon/Artisan stated publication date, although cover was identical and from the right publisher.

    I've just received the copy I ordered and it does have the metric/imperial measures instead of cups. Off for a read!
