...Just remembered a leftover recipe...
We had chicken in the SC with veg the other day and ate the meat and had just some veg and gravy left. I got a big saucepan and fried an onion, carrot (diced) celery and 1 cup rice. I added 2 cups water and all the leftovers from the SC dinner with a splash of lemon juice s&p and some herbs, brought it to the boil and simmered for 15-20 mins. It was a bit like a jambalaya and I put some spicy hot sauce on mine. I couldn't believe it, they ate the lot and asked for more!!!
We had a rolled shoulder of lamb on Sunday cooked overnight in SC with veg and I did the same again, went down a treat. So I got 2 meals for the price of 1 really.Very nice served with a bit of salad and fresh bread.

Just read your post and wondered if you have tried halloumi bread? Just make some dough, roll it out and put some cubes of halloumi cheese (fresh coriander is nice if you have any) roll up in a parcel and bake, they are nice hot or cold. Just a quickie to add a six pack of Diet Coke (half price at £1.29 in my One Stop) and a big packet of cadburys choc digestives (half price at 66p) to the total.
The Diet Coke can be justified as I pay 60p a can from the machine in work and have 2 a day so I've recouped the spend with just 2 cans (twisted logic?) but the biscuits I have no defence for! At least they're in work with me and I'll share them!
Tea tonight is going to be a giant jacket potato and beans and cheese - allergies are really playing up so can't be bothered with cooking, bung it in the oven and forget about it tea for me tonight!
On the plus side I have brought some HM potato salad made from leftover charlotte potatoes and a bit of slightly flagging quiche for lunch - trying to clear out the fridge befre buying more for a change!

We overspent last month, partially because I was quite ill and didn't have the energy to do a lot of baking and such. Poor DH was dealing with kids, work, house, and all. Thankfully I'm starting to feel a bit better, so we're looking at getting in on target this month.

Second try.
Have diverged from menu plan as got a ham hock on impulse. I boiled it yesterday and we had pea & lettuce soup using the stock, and then ham and salads for tea; there is enough left for tonight's tea as well.
I think I can do a small shop this weekend. I still have 4 pork loin chops, 3 chicken breasts, 2 packs sausages, 2 250g packs mince, 4 trout fillets, salami & mozzarella for pizza, frozen haddock, frozen smoked haddock, frozen prawns, and various other delights hidden the freezer!!!

What I do is just plonk it in a big saucepan, cover it with water, bring to the boil and then simmer until it's cooked. Depending on weight, it might be an hour.
