eggs & potatoes- lets get our heads together!

Hi all

Yesterday I bought a box of eggs & a bag of potatoes, with a view to using them for meals this week.

I got to thinking , these are some of the cheapest ingredients - that most people on a budget can afford, and surely the most versatile!

What combos can we come up with for these 2 ingreients of kings? I found myself thinking of only a couple - so I'll start:

1. Egg & Chips

2. Spanish omelette ( adding in mushrooms, peppers, sausage, whatever is in, but fine on its own otherwise)

Any other thoughts or recipes on these 2 ingredients?

    Hard boiled eggs in cheese/onion sauce, topped with mashed potatoes, browned under hot grill - lovely supper dish!

    Lynz - just googled 'potato and egg recipe' out of curiosity but there are some interesting combos on there that you might not have though about. ie eggs in potato nests, paoched eggs with potato pancakes, potato and egg breakfast bake, hungarian potato and egg casserole. thank the lord for google eh? lol

  • Scrambled egg and jacket potato. Just add grated cheese and brown sauce to get my favourite hangover 'cure' :)

    I know how to do cheese sauce - but was wondering about the mechanics of cheese and onion sauce? How do you do that please?

    Another recipe but there seems to be little difference, if any, between them.

    Delicious with a salad - but I have to add a dollop of Tommy K to mine :o

    Well, haven't actually done this for a while! The dear old lady who gave me the recipe about 35 years ago suggested poaching an onion in water until soft, then using the water as the liquid for a cheese sauce and stirring in the chopped onion as well. She was a dom.sci. teacher many years ago, and we lodged with her while waiting for our first house to be built. She gaveme loads of what I recognise now as OS ideas! I was then just two years married and about to have my first proper home so grateful for all ideas!
    I guess you could also fry the onion in the butter used to make the roux for the sauce?
