    OH is cooking dinner and one a week we have something like this

    Roast chicken (special offer £2 - feed four people)

    Roast Veg:
    Leeks
    Carrots
    Potatos
    Peppers (red and green)
    courgettes
    Garlic
    Black bean sauce
    Fresh Tomatos

    All roasted in the same dish (saves on washing up)

    Cost - £4

    (This is enough for four people but as the boys are away until tomorrow there'll be enough left over to maybe do something else with.)

  • Breakfast:
    Miser’s Muesli (serves 4 - approximate cost 78p)
    Ingredients:
    8ozs Scott’s Porage Oats (16p)
    4 tablespoons Waitrose Raisins (16p)
    4 teaspoons Waitrose Demerara Sugar (8p)
    1 pint full cream milk (or milk & water mix) (38p)
    Method:
    Mix the oats and raisins. Sprinkle with sugar. Top with milk.
    Serve immediately.
    Lunch:
    Quick Tomato Bouillon (serves 4 - approximate cost 66p)
    Ingredients:
    200g tube Waitrose Tomato Puree (34p)
    1 litre stock (hot water with 2 tspns yeast extract) (10p)
    2 small onions, finely sliced and saut!ed in oil (20p)
    5ml/1 teaspoon brown sugar (2p)
    pinch of dried mixed herbs (store cupboard)
    salt and freshly ground black pepper (store cupboard)
    Method:
    Bring the tomato puree and stock to the boil. Add the onions, sugar, herbs and seasoning. Simmer 20-30 minutes, stirring regularly. Serve hot with dumplings
    Dumplings (serves 4 - approximate cost 18p)
    Ingredients:
    115g/4oz Waitrose Superfine Self-Raising Flour (6p)
    55g/2oz Waitrose Sunflower Spread (8p)
    Salt and pepper
    A little cold water
    Method:
    Season the flour with salt and pepper.
    Rub the fat into the flour to make crumbs.
    Add a little cold water to make dough
    With floured hands form about 8 little balls.
    Add to soup, cover and simmer gently for about 12 minutes, until swollen.
    Serve immediately as dumplings left immersed too long become heavy.
    Dinner:
    Quick Quiche (serves 6 - approximate cost £2.39)
    Pastry:
    225g/8 oz Waitrose Wholemeal Flour (12p)
    2 tblspns Waitrose Sunflower Oil (store cupboard)
    a little cold water to mix
    Filling:
    3-4 medium onions, sliced (40p)
    drop of vegetable oil for frying (store cupboard)
    225g/8 oz Waitrose Medium Cheddar, grated (£1.22)
    3 Waitrose Free Range Medium Eggs (65)
    salt and freshly ground black pepper
    Pastry:
    Rub the flour and oil together to make a breadcrumb-like mixture. Add a little cold water to form a dough and roll out to line a flan case (if too sticky add a little flour, if too dry add a drop of water, if it breaks you can mould it on patchwork style).
    Filling:
    Saute the onion in the oil for about 10 minutes in a frying pan. Leave to cool then add the cheese, break in the eggs, season and stir whilst in the pan.
    Fill the pastry case with the cheese mixture and bake for 20-30 minutes, gas mark 6 (200c) until golden brown. Serve with baked potatoes and salad.
    Baked Potatoes (serves 4 - approximate cost 37p)
    4 medium potatoes (37p) from local market
    Method
    Wash potatoes and remove any bad parts.
    Bake on top shelf (gas mark 6) for 45 minutes.
    Serve hot.
    Simple Salad (approximate cost 60p)
    Ingredients: (from local market)
    half a lettuce, rinsed (20p)
    3 tomatoes, sliced (15p)
    portion of cucumber, sliced (20p)
    1 carrot, grated (5p)
    piece of leftover onion, chopped fine
    Method
    Place the salad ingredients in a large bowl. Serve with a
    Simple Oil and Vinegar Dressing:
    Ingredients:
    half a teaspoon salt,
    2 teaspoons of any vinegar
    2 teaspoons of sunflower oil
    Method:
    Stir the salt into the vinegar until it had dissolved.
    Add the oil and mix.
    Add to the salad just before serving.
    Toss lightly

    Cream Of Onion Soup__________________________

    6 Onions 90p
    2 Pints of vegetable Stock ( Two Vegetable stock cubes) 23p
    ¼ Pint of cream 50p
    2oz of Butter 20p
    Salt and Pepper to taste Total £1.83
    Chop the onions. Heat the Butter, add the onions. Stir until onions are tender. Add the Veg Stock and season. Strain the soup and add the boiling cream.


    Minced Steak Stew with Dumplings
    Pound of minced steak £1.70
    Large Onion 15p
    4 Carrots 30p
    Gravy Granules 20p
    8oz S/R Flour 20p
    4oz Vegetable Suet. 40p. Total £2.95
    Soften the Onions In small amount of oil. Add Minced Steak and fry gently until the mince has browned. Add 1 pint of heated water with Gravy Granules and add Sliced Carrots. Simmer for 30 Mins in a covered pan. Mix Flour and suet and add small amount of water until it forms a dough. Divide the Dough into 8 pieces and place in the stew. Cover and simmer for a further 25 mins

    Total Cost of 2 courses £4.78

    I've made the cookie surprise with ginger nuts and orange juice with a hint of rum therein - works as a party pudding when stacked up individually!

    I'm collecting all these recipes and shall be having a very luxorious [and cheap] month of May - thank you everyone.

    Starter – Mushroom Soup – in a pan add some oil (I have this) and fry off the mushrooms. Then add a stock cube to a pint of boiling hot water add to the pan, and then blend the mixture together, and add the a little bit of the cream to the pan and serve.

    Main – Tuna Pasta – Cook the pasta and then add the tuna and tomatoes and one of the other stock cubes

    2 Desserts

    Dessert 1 – Trifle made easy – Place the swiss roll on a chopping board and cut in half, with one half cut into slices (the other half is for the 2nd dessert) and pour some of the orange juice (you won’t need it all) so that it soaks into the sponge. Then place some (leave a few spare) of the mandarin oranges on top of the sponges. Pour over half the cold custard (save the other half for the 2nd dessert). Whip the rest of the double cream from the starter and spoon on top of the dessert. Place a few of the leftover mandarin oranges on top of the trifle.

    Dessert 2 – Swiss Roll and Custard – Heat the remaining Custard in a pan, and slice the remaining swiss roll into 4 and warm in a microwave, and then enjoy swiss roll and custard!

    Drink – Orange Juice – seen as you probably didn’t use all the orange juice before you should get at least 3 small glasses out of the remaining carton!

    OK, this is only my 2nd post so please have patience with me! Here’s 3 courses that will feed 4 - 6. We’re normally too full to have a desert but I thought I should include one as everyone else has!

    STARTER - Lamb Koftas & chutneys
    MAIN - Yellow split pea & coconut dhal
    Spicy potatoes
    Rice
    DESERT - Lemon curd ice cream

    LAMB KOFTAS WITH CHUTNEYS
    KOFTAS
    400g minced lamb £0.84 (Tesco Value Minced Lamb 800g £1.68)
    3tsp medium curry powder £0.08 (Tesco Medium Curry Powder 80g £0.85)
    2tsp finely grated ginger £0.11 (Ginger root loose £0.33)
    2 cloves crushed garlic £0.05 (Tesco Garlic each £0.35)
    1 small onion grated £0.04 (Tesco Value Onions 2 Kg £0.78)
    TOTAL £1.12

    Mix all the ingredients together. If you have metal or wooden skewers then take the mixture and shape around the end in a sausage shape, if not then just shape them into sausage shapes. They should make at least 12. Chill for at least 30 minutes or until you are ready to cook the main course. When ready to eat then either cook on a griddle or under a grill for 8 - 10 minutes.

    CHUTNEYS
    5g chopped Fresh Coriander £0.14 (Fresh Coriander 25g £0.69)
    125g chopped Cherry Tomatoes £0.34 (Cherry Tomatoes 250g Pack £0.68)
    ½ small finely chopped onion £0.02 (Tesco Value Onions 2 Kg £0.78)

    Mix tomatoes, coriander & onion to make a chutney. Serve with mango chutney & Lamb Koftas.


    YELLOW SPLIT PEA AND COCONUT DHAL
    1 sachet creamed coconut £0.10 (Pataks sachets x 4 £0.38)
    600ml veg stock (one cube) £0.02 (Tesco 10 Value Veg Stock Cubes £0.19)
    250g yellow split peas £0.20 (Tesco Yellow Split Peas 500g £0.39)
    2tsp finely grated ginger £0.11 (Ginger root loose £0.33)
    2 cloves crushed garlic £0.05 (Tesco Garlic each £0.35)
    2 onions finely chopped £0.08 (Tesco Value Onions 2 Kg £0.78)
    1tsp garam masala £0.05 (Tesco Garam Masala Spice Blend 38g £0.85)

    Gently fry the onion, ginger and garlic until soft. Add the spices and fry for a minute, then add the yellow split peas and cook for another minute. Add the stock and coconut and bring to the boil, then reduce to a simmer for about 50 minutes until the peas are soft but not mushy. If the mixture gets too dry during cooking add some more water.

    SPICY POTATOES
    500g potatoes, boiled £0.23 (Cornish White Potatoes 2.5kg £1.12)
    2tsp finely grated ginger £0.11 (Ginger root loose £0.33)
    1tsp garam masala £0.05 (Tesco Garam Masala Spice Blend 38g £0.85)
    1tsp ground turmeric £0.04 (Tesco Ground Turmeric 45g £0.68)
    1tsp ground cumin £0.04 (Tesco Ground Cumin 45g £0.68)
    1tsp ground coriander £0.04 (Tesco Ground Coriander 36g £0.68)
    1tsp salt £0.01 ?
    2tbsp cooking oil £0.03 (Tesco Pure Vegetable Oil 1 Litre £0.98)
    5g chopped Fresh Coriander £0.14 (Fresh Coriander 25g £0.69)

    Cut the potatoes into medium size chunks and gently heat the oil. Add the ginger and spices to the oil and stir well, add the potatoes and fry gently until lightly golden. Stir through the coriander and serve.

    Serve with 400g rice £0.27 (Tesco Easy Cook Long Grain Rice 2kg £1.35
    Cook the rice according to instructions.

    LEMON CURD ICE CREAM (best made at least the day before)
    Tin of custard £0.19 (Tesco Value Ready to serve custard 396g £0.19)
    500g Greek Yoghurt £0.95 (Tesco Greek Style Natural Yoghurt 500g £0.95)
    1/3rd jar Lemon Curd £0.12 (Tesco Value Lemon Curd 411g £.035)
    TOTAL £1.26

    Whip all the ingredients together and freeze for a few hours (or until it starts to go hard) in a shallow container. Mix up the semi frozen mixture with a fork and then put back in the freezer to go hard.

    GRAND TOTAL £4.99! (I hope my maths is correct!)
    Far cheaper and healthier than anything you’ll get from a takeaway! Every Friday is curry night in our house, I hope you enjoy.:D

    Fry onions and garlic add turkey mince and mushroom, peppers add seasoning to spice up (chilli powder etc.). Add baked beans and tinned tomatoes spice to desired taste.

    Either:

    (a) place sauce on wrap, add grated cheese, fold in half and fry or
    (b) place sauce in wrap, roll up, place in oven dish, repeat until oven dish full and cover in homemade cheese sauce prior to cooking for 40 mins
