    Fab thread, got lots of ideas and a few favourites. So here’s my contribution based on Sainsbury’s prices and £5 buys everything you need for the meal.


    Vegetable Thai Curry served with boiled rice - Serves 4

    You will need:
    Blue Dragon Coconut Cream UHT 250ml (add water to make up to 400ml) = 79p

    1 tbsp Sainsburys thai green curry paste 250g jar = £1.49p
    1 chopped Chillie from Sainsburys Chillies, Mixed 50g = 48p

    2 loose onions = 13p x 2 (based on Sainsburys fiver meal price) = 26p

    1 frozen packet of Findus frozen Wok vegetables 500g = £1.49p
    1 packet Sainsburys Long Grain Rice 1kg = 43p



    Total cost: £4.94


    1. Fry onions in oil until softened.



    2. Add chillies and fry for a few minutes to help release their flavour.



    3. Add frozen Wok vegetables to the pan and cook for a few minutes.



    4. Stir in coconut cream (made up with water to 400ml) and thai green curry paste. Simmer for about 30mins.



    5. Cook the rice according to the instructions. Any rice in your store cupboard would be great. Especially if you have any thai fragrant rice or jasmine rice.



    6. To help it feel more special, why not serve in bowls with chopsticks.





    Other ideas to vary this:

    - leftover meat such as chicken is ideal for this dish simply cook with the onions at the start.

    - also ideal for any frozen prawns left in the freezer pop them into the dish about 5-10 minutes before serving depending on the size of the prawns.

    - add any leftover mushrooms you may have.

    - beansprouts are quite cheap to buy at the supermarket and could also be added

    - you could spice up the rice in a number of ways. Eg by adding fried chopped onions or an omelette (chopped) up to the rice.

    My family favourite:

    Corned Beef Casserole

    Feeds 4

    1 tin of Corned Beef
    4 large potatoes
    1 medium onion
    couple of handfuls of frozen peas.
    2 beef stock cubes, diluted in about a pint of water.


    Method

    Slice up the corned beef (put it in the fridge so it is hard), the potatoes, and the onion.
    Layer up an ovenproof dish, in layers of corned beef, potatoes, and onions and peas mixed. Kepp going till you reach the top of the dish. Season if necessary.
    Cover with stock cube gravy.
    Place in a 140 C oven and cook for about an hour till the potatoes are soft. Serve with crusty bread.

    I made this last night & it was yummy!!! My husband wouldn't touch it though as he hates corned beef!! His loss!! :rotfl:

    Today we are having roast pork for lunch. got two joints reduced to 27p & 24p at Tesco last night so total price for roast pork dinner for 5 people will be about £2.00 lol !

    kimbi15, I've just tried your giant jaffa cake - the whole family loved it, I up-sized the flan case to a 220g £0.46, I used a value tin of mandarin segments £0.11, 1/2 pack of the jelly crystals £0.19 and 1.5 bars of value cooking chocolate ('cos it went too hard too fast and I needed to melt an extra 1/2 bar to cover the bare bits :o ) £0.59. So, total cost was £1.35 and would feed 8 people. So, I didn't even increase your costs. (all ingredients bought from Tesco yesterday).

    Thank you for posting this recipe, I think it will remain a firm family favourite for a long time to come.

    leeks in Tesco have been 3 for £1 for a while now. The sort that come top'n'tailed in a sealed bag. Occasionally if you're lucky you get 4, but it's usually 3!

    Try my cookie surprise for £1.91

    Tesco Chocolate Chip Cookies 250g £0.40
    1 Cadburys Flake £0.37
    Tesco Value Orange Juice 1 Litre Carton £0.58
    Tesco Fresh Double Cream 150ml £0.56


    Whip the cream, and place some on the plate.
    Then dip each cookie in the orange juice and sandwich the cookies with the cream and line stood up on the plate.
    Cover the cookies in the whipped cream, and crumble the chocolate on top!
    Place in the fridge for 40mins
    Eat! :) x

    Mexican Chilli Potatoes
    Tesco Potato Wedges 1kg £0.69
    Tesco Beef Steak Mince 250g £1.23
    Tesco Cool Salsa Dip 300g £0.56
    Tesco Value Mild White Cheese Small £1.30

    Cook the potato wedges as specified on the bag.
    Meanwhile brown the mince, add the salsa and heat through
    Place the potato edges into a ovenproof dish and add the beef mixture on top
    Grate the cheese over the dish and place under the grill until golden
    Yummy!

    Chicken and sweetcorn soup
    Sweet and sour battered chicken with garlic rice
    Deep fried sweet potato balls
    Soup-81p
    chopped ginger-2p, splash sherry-1p,1 chicken breast-57p,2x chicken stock cubes-6p,value sweet corn-15p,chives-garden.
    Mix ginger,sherry and chicken cut into thin strips.Boil stock made up to 1.5 pts.Add sweetcorn and chicken mix.Cook for 5 mins,sprinkle with chopped chives and serve.
    Sweet and sour chicken and garlic rice-£1.08
    1 chiken breast cut into cubes-57p,1 egg-8p,flour-1p, value sweet and sour sauce-26p,tomato cut into wedges-12p,value long grain rice-11p,soy sauce-2p,garlic clove-2p.
    Make batter with egg,flour and water and season.Coat chicken and fry.Heat sweet and sour sauce and add tomato.Cook rice and add soy sauce.Fry garlic till golden and mix into rice.
    Serve with prawn crackers-64p.
    Deep fried sweet potato balls-£1.59
    Sweet potatoes-64p,rice flour-16p,brown sugar-8p,crystalised fruit-55p,sesame seeds-14p,golden syrup-2p.
    Cook potatoes and mash.Beat in flour and sugar.Stir in fruit and form balls.Roll in sesame seeds and fry.Combine syrup with hot water to form runny consistency and pour over.
    Total cost-£4.23:D
