    My family favourite:

    Corned Beef Casserole

    Feeds 4

    1 tin of Corned Beef
    4 large potatoes
    1 medium onion
    couple of handfuls of frozen peas.
    2 beef stock cubes, diluted in about a pint of water.


    Method

    Slice up the corned beef (put it in the fridge so it is hard), the potatoes, and the onion.
    Layer up an ovenproof dish, in layers of corned beef, potatoes, and onions and peas mixed. Kepp going till you reach the top of the dish. Season if necessary.
    Cover with stock cube gravy.
    Place in a 140 C oven and cook for about an hour till the potatoes are soft. Serve with crusty bread.

    Depends when and where you buy them. I got 3 leeks for £1 last week. Few weeks ago, I bought them at the same market stall later in the day and paid £1 for 7 leeks as they were close to the end of the day. Other times, they have sold out by early afternoon. Buy at the supermarket and you'll generally pay top whack, whatever the time of day.
    Cheap and cheerful. Preferably free. :T LBM - more a gradual rude awakening.

    Fair enough, but on a thread like this where it's all about the price of the ingredients, it makes more sense to post realistic, "every day" ones. Sorry, I know I'm just being picky :o .

  • Right you lot here's a challenge just been to Morrisons and got a shoulder of pork for 2.20 kg / 98p lb tolal cost 6.78 :mad: !! lost my pound sign it's dissapeared off the key board i get this instead# Anyway got the butcher to cut it into 1 joint about just over half the size for tomorrow dinner And the cest was cubed total weight left 1200g price of left 265p sugestions for what meals to make with the rest how many meals for 4 can I get

    I posted this in the grocery challenge thread for April, may as well plonk it in here too since it's all typed up and people seem to like the sound of it! A really simple and cheap traditional welsh meal, 'tatws pum munud', or 'five minute potatoes' translated to english. Cooking time, 4 to 6 hours lol!! (5 minutes to prepare though, that's gotta be second only to beans/cheese on toast surely?)

    Tatws pum munud (aka bacon casserole)

    INGREDIENTS:
    1kg cooking bacon (£1.40)
    400g loose new potatoes (£0.32) [sweet potatoes also work well]
    200g button mushroom (£0.64 - £0.79 for 250g)
    1 1/2 large onion (£0.44 - £0.88 for 3)
    2 cubes vegetable stock (£0.02 - £0.19 for 10)
    100g carrots (£0.08 - £0.90 for 1.2kg) [use frozen if you like]
    100g peas (£0.11 - £0.98 for 900g) [use frozen if you like]
    100g sweetcorn (£0.08 - £0.80 for 1.1kg) [use frozen if you like]
    some oil (£0.01 - £0.89 for 1 litre)
    sprinkle salt (£0.01 - £0.24 for 750g)
    sprinkle crushed black pepper (£0.02 - £1.07 for 50g)
    water (£0.00)
    note - prices are from tesco website today, amounts rounded up to penny.

    METHOD:
    1) Cut any huge chunks of fat from the cooking bacon. Don't bother removing it all, you need some of it, and it's a myth that eating fat makes you fat anyway. You may find another use for the fat but to be honest I tend to throw it out :o
    2) Clean and chop the potatoes and mushrooms roughly. Don't bother peeling the potatoes.
    3) Peel and roughly chop the onions, lightly fry them in the oil to soften a little. Drain the oil.
    4) Add all the ingredients (other than stock cubes and water) to your cooking thingermajig of choice (can be made in a huge pan on a hob, pyrex casserole dish in the oven, or crock pot in slow cooker - i have never personally tried the pan, tend to go for the casserole dish)
    5) Stir it all up, it doesn't matter if you can't mix it too well (this seriously fills my casserole dish so have trouble doing so myself) you will be stirring when it's part cooked anyway and it gets easier when everything's a bit softer
    6) Make up the stock with boiling water (or substitute with any stock you have from boiling bones etc) and add to the mixture.
    7) Top up with water til all ingredients are just about covered.

    Cook on a low heat for a long time, checking and stirring every hour. This isn't an exact science, but for this kind of quantity I tend to put the casserole dish in the oven at about 160c for anything from four to six hours.

    There isn't really a 'correct' way of making the dish, I figure most people change it to suit their tastes. I've tried adding a couple of tins of tomato before now, was nice, but I prefer without. Mum does hers without the sweetcorn peas or carrots, gran doesn't add mushroom etc. Just have a play around with it really... The recipe is old style by it's very nature, it started as a 'use up leftovers from sunday roast' meal.

    If you give it a try let me know what you think, maybe I just like it for the 'nostalgia factor', but I think it's delicious and a pretty healthy meal really
    Oh, and you can expect this vat of food to fill up four adults as a main meal easily, I have a healthy appetite and this does me for at least 4 main meals (freezes ok but the potatoes do tend to go a bit 'soggy'), or can be spread out over eight lunches with a bit of crusty bread for dipping!

    total cost of meal (tesco prices): £3.13

    I suppose I could try and be flash and say as a dessert you could follow with some bread and butter pudding or something, but to be honest I'd rather a lolly from the freezer, and at 99p for 12 that easily comes under budget though isn't too 'old style' haha!
  • This recipe works well with fussy eaters.

    Baked Bean Budget Chilli

    1 onion chopped 11p
    2 cloves garlic crushed 10p
    1 red pepper chopped 78p
    2 red chillis chopped 24p
    3 tsps sainsburys mild chilli powder 30p
    2 tsps ground cumin 12p
    2 tins sainsbury basics peeled tomatoes 38p
    2 tins sainsbury reduced salt & sugar baked beans 62p
    200g whole grain brown rice 18p
    125g medium cheddar grated 78p
    £3.61

    Depending if your using brown or white rice put rice on to boil.
    Gently fry onion, garlic peppers and fresh chilli for a couple of minutes.
    Add chilli powder and cumin and gently fry for 30 secs.
    Add tomatoes and simmer for 10 mins.
    Add baked beans and gently heat for a couple of minutes.
    Serve on rice and top with cheese.

    Main course 1: Pork noodles
    £
    600g cubed pork 1.33

    5g cut sage 0.10

    130g SP curry noodles 0.16

    100g frozen petit pois 0.17

    2tbsp olive oil 0.12
    Subtotal
    1.88

    Heat olive oil in a frying pan. Add cubed pork and cook through until browned and tender. Make up noodles according to pack instructions. Cook peas in boiling water. Add noodles, peas and sage to pork. Mix thoroughly and serve when heated through. Serves 4.


    Main course 2: Pork in apple cider
    £
    600g cubed pork 1.33

    5g cut sage 0.10

    140g SP apple sauce 0.25

    200ml oakstone dry cider 0.12

    1kg SP potatoes 0.30

    14g spreadable butter 0.07

    300g tin SP garden peas 0.19
    Subtotal
    2.36

    Heat a frying pan and brown pork slowly on low heat (no oil). Add sage, apple sauce and cider to pork and simmer until pork is cooked through and tender. In the meantime, boil potatoes. When cooked, mash with butter. Heat tinned peas. Serves 4.

    2 main course meals total £4.24

    If you are willing to reduce the amount of pork to 400g in each dish – a bit light on meat for 4 people (or a good diet!), but cubed by a butcher is usually large cubes; it could be cut further into small dice if necessary – the above costs would be cut to £3.34. And the following third main meal could be made.

    Main course 3: Sweet and sour pork

    400g cubed pork 0.88

    50g Heinz tomato ketchup 0.09

    200ml SP malt vinegar 0.05

    75g pineapple chunks 0.27

    100g frozen petit pois 0.17

    100g easy cook rice 0.09

    2tbsp olive oil 0.12
    Subtotal
    1.67


    Heat olive oil in a frying pan. Add diced pork and cook through until browned and tender. In a saucepan, lightly heat the ketchup and vinegar. Add the cooked peas and pineapple chunks and heat through. In the meantime, cook the rice until tender. Add the sweet and sour sauce to the pork. Either serve the pork on a bed of the rice or add the rice to the pork/sauce mix before serving. Serves 4.


    3 main course meals total £5.01 (am I forgiven the extra penny?)

    2 ways of looking at it really - fair comment that it should be realistic pricing. A deal you can't repeat isn't fair. On the other hand, MSEers at expert at bagging a bargain. I used a price of 42p for a tin of Princes tuna in one of these recipes. It was a good offer price but I have enough tins to last 12 meals (probably more as I often spread a meal over more than 1 day by adding extra pasta/rice/potatoes) and I rarely pay more than 50p per tin as I am always on the lookout for offers. I am not fussy about brand and stock up when offers are on.
