    Thanks, We too have loads of Elderberries along with the Blackberries and I didn't know what to do with then apart from making wine. Does anyone have any ideas for Rosehips?:D

    elderberries - jelly, cordial, ice cream
    rosehips - syrup (cordial) and probably jelly too.

    Mix them with sugar - boil and put in jars - mix one teaspoon of this with hot water to make a "tea".

    It is supposed to be very good for coughs, colds and flu.

    Blackberry and Elderberry Jam

    Take equal quantities of blackberries and elderberries (stripped of stalks), put in pan, bring to boil and cook for 20 mins. Allow ¾lb sugar to each 1lb fruit, bring again to boil for 20 mins. Pot.

    Elderberry Jelly
    from Alan Joellenbeck
    2 quarts (1.9 litres) elderberries with stems removed
    2 cups (500ml) water
    1 box pectin
    5 cups (1200ml) sugar

    In a sauce pan simmer the elderberries in the water until berries are soft.

    Strain through a cloth.

    Be sure you have 3½ cups of juice; if not, pour a little water through the crushed berries.

    Return the 3½ cups juice to pan.

    Add pectin to the juice and bring to a boil.

    Stir in the sugar and bring to a full rolling boil.

    Boil for 1 minute.

    Remove from heat, skim and pour into hot sterilized jars.

    Seal with hot paraffin immediately.

    I think they mean paraffin wax. The little waxed paper discs will do the same job, though ;)

  • Can anyone tell me how to make elderberry wine?

    I am a complete novice, but there is an abundance of elderberries where I live, and I enjoy the odd tipple!!

    Any suggestions gratefully received!! :A
