They are very tedious to strip off the stalks though.........:o
Use a fork to strip them off - still time consuming but a bit quicker0 -
I've just made Pontack Sauce that I found in an old recipe book and which is, apparently, good with liver
Haven't tasted it because it needs to mature, but it smells very pungent!
Anyhoo - thought I'd Google it and see what else it can be used for and found an Elderberry page that might be useful:

i really really really want to make something (free) with elderberries but I tried cordial last year and it was DISGUSTING.
Has anyone had a chance to try out any of the recipes on this thread (especially jams, cordials and maybe pies/crumbles) and found them to come out nicely? Would love to know which ones are worth trying as it's a messy business and haven't really got time to experiment. Hopefully something has tasted delicious!!0 -

I actually made some yesterday!!! While out working I just happenned upon these trees all laden with fruit and i just had a carrier in the boot. When I got home i stewed them all added sugar and cloves and hey presto!!! Only thing is I didnt have any sterilised containers and was rooting about to see what I could use. I found an old empty bottle in the cupboard so washed it out and used this. Will this be om do you think? the bits I tasted that didnt go in tasted very nice!0

When I made elderflower cordial earlier in the Summer I put it in freezer containers and froze it.I'm sure your bottle will be fine. To sterilise wash well and put in an oven at 100c for about 30 mins.0
