Jamie Oliver does a nice one, but he uses it with thighs with skins on. I thinks its called sticky and crispy chicken thighs.Never take things for granted0

My ex used to work for a wholesale butchery and we would interchange the two types, breast and thigh, there is a slight difference in shape and size and colour, but I think it makes almost no difference to taste at all and when you make a recipe where the thigh is not on the bone, it doesn't really matter, probably just effects cooking time etc.

Chicken thighs are nicer than breasts. Breasts lack flavour and expensive.
The main difference between thigh and breast is that thigh has more fat (especially if you keep the skin - skin on thighs are cheaper). This will give food more flavour.
No British chicken is tough, but thighs are a bit firmer than breasts, you can use them exactly the same way.
Bone-in gives more flavour to food, and again it's cheaper. If I had skinned boneless thighs, I'd put them into a curry, or substitute them in any recipe that specifies breast as you suggest. Because they're skinless (no fat) you'll want to avoid roasting and grilling because they will dry out. Stick to chicken in sauce.
Bone-in thigh I use for curry, paella, any kind of chicken casserole or stew. The bone is good for longer cooking.0 -

I prefer chicken thighs to breasts as I think the meat is tastier. I normally cook them with the bone in but that does make them a bit fiddlier to eat. These earlier threads might give you some ideas:

Yes just substitute boneless skinless thighs for breast for now, chopped in curries, stir fries etc! As you get more confident try bone in and skin on - its only 1 bone running through the middle of each piece and therefore they are not fiddly to eat - make a very tasty easy mid week roast just bunged in the oven with some flavourings and you get the bonus of lovely crispy skin.
I buy skin on and bone in (from the asian supermarket great value) then prep them up before freezing - for curries, casseroles etc I take the skin off, some I leave as is for roasting, grilling, kfc etc, others I bone and chop for stir friesPeople seem not to see that their opinion of the world is also a confession of character.

We have a good recipe, I can dig out the proper details if needed, but in summary:
Season 4 thighs (or 2 thighs and 2 drumsticks) and sprinkle with smoked paprika
Brown in a casserole
Remove, and add chopped chorizo
When the oil has seeped out, throw in a chopped onion and soften
(You may like to drain off some oil after this...)
Put chicken back in, add a tin of butter beans and a small tin of tomatoes
Add water if it looks a bit dry
Simmer covered on a very low heat for 30 minutes, then uncovered for a little longer
Add parsley if you have it, and serve with rice, or crusty breadMy TV is broken!

Thanks to everyone who replied. I was going to buy boned thighs, but thought it would be a pain fishing them out once dishes were cooked so would try boneless. Then all the recipes I found used thighs with bones!
I have 8 thighs and there are only 2 of us, so would you think 2 each per meal? I think I will just make a chicken curry to start and then try your chorizo recipe Fay as it sounds lovely another time. I have had them in the freezer for ages so will feel better for having used them at last!

Where do you buy the thighs boneless? Only ever have seen them with bones in and OH hates having to eat meat of the bone. Would love to try them, but where do you buy them?0

I got them in Tesco - they were £2.49 for 8. They are called "thigh fillets" and say ideal for frying. They are at least 6 months old though so probably risen in price since then!!0

you got a good bargain Fitzio. They are £2.99 in my Tesco ,that is for 4 - 5 boneless thigh fillets, about 500g.
I am the same and use them just as I would a chicken breast. Chicken legs are another good value option.0
