Pitta Bread
1/2 tsp yeast
250g/9oz strong wholemeal flour
1/2 tsp sugar
1/2 tsp salt
150ml water
Use the dough programme.
Once its finished, divide the dough into 4 balls. Roll into oval shapes approx 10" by 5". Put on a baking tray (i lightly flour mine)
Prove for 8 minutes. bake at 240C/475F or GM 9 for 6-9 minutes
Wrap in a damp tea towel to keep them soft and pliable
I usually make double the quantity.
I usually use a mix of white and wholemeal flour, although you can use all white as well, I use whatever I have!0 -
Favourite food to cook - anything with pasta. Always turns out ok and you can make as much or little as you like.
Dice some chicken, add chopped onions, garlic, basil (dried is fine), peppers
and fry in a large pan with a little olive oil. Add S and P. Mix together tinned chopped tomatoes and a tub of cream cheese and add to pan . Add cooked pasta, stir and serve with garlic bread.
Simple and never fails." The greatest wealth is to live content with little."

One of my favourite, very healthy and quick recipes is for Spicy Lentil Soup
7-8oz Red Lentils
2 Onions
1 Tin Tomatoes - snipped up if not chopped
1/2 - 1 Tbsp Curry powder - to taste
1/4 - 1/2 Tsp Chilli - to taste
1 3/4 pints stock - cube or homemade
1. Rinse the lentils under running water until it runs clear.
2. Put stock, onions, lentils, tomatoes, curry & chilli in a pan.
3. Bring to boil then simmer for 20 mins until lentils are soft.
I serve with naan or any crusty bread. It feeds 4 comfortably. It's a regular in our house for lunch in fact there's some simmering away now!
You can also reduce the stock a bit and make dhal - a thicker version similar to chilli/curry and serve with rice. HTH0 -
