    Hi guys, hope you are all having a good weekend and sending my best wishes to those who need a bit of a boost :)

    So far, my plan of £40 for this month is coming in on budget. As you'll see by my signature, this is all I have left for the rest of the year after slicing my target from £1200 (£100 per month) to £1000 for the entire year. There is a bulk shop included within my overall 'spent so far' figure and from 1st June until 31st December I hope to manage on £40 per month.

    Been to the Co-op and spent £7.97 on milk, a fresh chicken, baking potatoes, peppers, tomatoes and cucumber. It should have amounted to £9.97 but I had 2 x £1 off coupons that arrived with my Co-op membership dividend. I don't count coupons, only cashback, which gets saved, so as well as being £2 better off with the groceries this week, I'm also up £37.64 on my cashback total :)

    3 x baking potatoes - £1.60!!!!!!!! :eek: Roll on home grown tatties, flowers are out, so it shouldn't be too long now.
    I reserve the right not to spend.
    The less I spend, the more I can afford.

    Have spent £15.74 this week - not bad as am feeding two for a long weekend - bringing the new total to the month to £43.67 for the month to date. Still on target and may even come in below budget! :D

    Hello again :D

    Well hubby has rung to say they got his tee off time wrong..so he won't need any meals at home as he will get fed there :T ...even more meals not used this month :j .... I think im going to declare my total for this month now..even though i don't think we get paid until friday... I really can't think of anything i should need before then :confused: so im declaring this month at €116.68 out of €150 ..which im thrilled with as €42 is for enough cheese to last yonks:D ... and as i normally get €450 a month house keeping -and i used to spend that too :o oohhhh the shame :o

    Have the baguette dough rising...nom nom nom.. instead of making the 6 i did before -which were still to big for me , im going to cut the dough into 6 and make 4 for hubby and then cut the other 2 in half to make 4 for me ;)

    oooooohh and i now have my first 2 melons on my plants... only the size of grapes...but melons they are......ooohh im so excited..... and my asparagus peas are flowering too..oooh ooohhh and and i should be fetching the broad beans off this week..fingers crossed :D
    right will go away again now :D

    MRSM - OMG 12 NSD's!!!! Is that no spend days at all or is it just on groceries? what do u do with the money u have saved from ur housekeep?

    I know i shouldnt be upset that ive gone over but i think i did set my target a bit low as my mum was over, she is also over next month also for a week with her hubby this time lol.

    Linzmac - Not too borthered what type of quiche I have loads of eggs bacon cheese and onions and have some herbs in garden will that do?

    Sounds perfect! Basically you just need to fry up onions & bacon then mix with cheese, egg & milk and pour into pastry case...are you making your own pastry?

    Here is a recipe for Quiche Lorraine (if you don't have cream, sure you could just use a bit more milk instead):

    Preparation time 30 mins to 1 hour
    Cooking time 1 to 2 hours
    Serves 4

    Ingredients

    170g/6oz short crust pastry
    1 small onion, finely chopped
    85g/3oz bacon, diced
    1 tbsp butter
    120ml/4fl oz milk
    120ml/4fl oz single cream
    2 eggs
    1 egg, yolk only
    55g/2oz mature cheddar, grated
    salt and freshly ground black pepper


    Method
    1. Preheat the oven to 220C/400F/Gas 6.
    2. Roll out the pastry and line a 20cm/8in flan ring. Cover with cling film and chill in the fridge for at least 30 minutes.
    3. Meanwhile, gently fry the onion in the butter until soft but with no colour. Add the bacon and fry until cooked through. Drain off any excess liquid. Set aside.
    4. Bake blind the pastry case in the preheated oven for 20 minutes until the pastry is dried out with no colour.
    6. Reduce the oven temperature to 150C/300F/Gas 2.
    5. Mix the milk, cream and eggs together and add to the onion mixture along with the cheese. Season.
    6. Pour the mixture into the pasty case and bake in the oven for 45 minutes to 1 hour until the filling is set.
    7. Remove the ring and bake for another 5 minutes to brown the pastry. Serve hot or cold.


    And a pastry recipe if you are going to make it yourself:

    Makes 6oz, lines a 16cm tin

    Ingredients
    125g/4oz plain flour
    pinch of salt
    55g/2oz butter, cubed
    30-45ml/2-3 tbsp cold water


    Method
    1. Put the flour and salt in a large bowl and add the cubes of butter.
    2. Use your fingertips to rub the butter into the flour until you have a mixture that resembles coarse breadcrumbs with no large lumps of butter remaining. Try to work quickly so that it does not become greasy.
    3. Using a knife, stir in just enough of the cold water to bind the dough together.
    4. Wrap the dough in clingfilm and chill for 10-15 minutes before using.
    5. Alternatively using a food processor, put the flour, butter and salt in the food processor and pulse until the fat is rubbed into the flour.
    6. With the motor running, gradually add the water through the funnel until the dough comes together. Only add enough water to bind it and then stop.
    7. Wrap the dough in clingfilm as before and chill for 10-15 minutes before using.

  • Oh no. £4.10 left until the end of the month. Will definitely need milk before the end of the month and I'm not sure how creative we can be with everything else, but we'll give it a go!! Picked another few strawberries and peas today. They are delish..... Keep up the good work everyone...
