Yup I work in Tesco bakery and we give it away free to any customer who asks.
I didn't know that there was any laws or rules governing why we have to do this, as far as I knew it was just a nice gesture.
The thing is when you see how much this stuff costs for a supermarket like tesco and how much is used on a dailly basis then the amount given to a customer really never transpires as anything near a loss.
And oh yeah when people ask me for some, be a bit specific about how much you want, if you say quite a big bit then chances are you'll get it.0 -
When storing yeast it is best not to put in a small airtight container - as the culture is alive doing so will make it sweat. It needs the air. If you dont want a smelly fridge put the yeast in a large container in the fridge but open it a couple of times a day for the air to exchange (best done outdoors to stop your kitchen ponging). Fresh yeast will keep fine in a fridge for no longer than week.
Fresh yeast freezes very well - Wrap in foil or clingfilm and keep no longer than 3 months - keep in 1/4oz lumps and defrost at air temperature and then refrigerate. Its best to defrost a couple of days before you want to use it - it give the yeast a chance to wake up.
Where you can always use fresh yeast - the finished product is invariably better.0 -
I beleive the original poster meant it to read as a 'age old' bread rule, rather than an 'old bread' rule (ie it is a rule that has always gone on!). I'm off to get mine!0

I asked for some yeast in Sainsbury's today, but it cost 16p for 50g, now looking back at the thread the first post says that Sains. charge. :rolleyes: I don't even know how to use it yet either! :cool:Torgwen..........

I have around 2kg of trub at the bottom of my barrels when I use bread yeast. Anyone is welcome to it - I just throw it away and stock up on the next batch. I have to be very wary of infection in my homebrew :- )Tim0

- 500 g of flour minimum (17,6 oz)
- 300 g of water (10,6 oz)
- ½ cube of yeast (21 g or 0,75 oz), or the equivalent of dried yeast (8g or 0,3 oz)
- 12 - 13 g salt (0,45 oz)
- a pinch of sugar
mix and leave to rise, then bake :- D
Or, alternatively get yourself a wort kit from your local homebrew shop and substitute the dried and out of date yeast with your fresh stuff - should make an interesting brew! (you'll need a big foodsafe bin!)Tim0 -
