While playing with my new recipe software I came across these webpages Woman's Day: 3 Ingredient Dinners and also Cooks.com: 3 Ingredient Recipes
Further search shows there are a number of books on this subject too!
Thought it would be interesting (and hopefully inspirational too!) to have a thread to post our own "3 & 4 MSE ingredient recipes", and hopefully make the process of shopping and preparation easier, quicker and moneysaving into the bargain.
May even make those really hectic-resort-to-takeaway-meals less of a [STRIKE]necessity[/STRIKE] temptation
If the recipe calls for a pantry basic (ie, butter, oils, dried herbs, seasonings) then they will be in *addition* to the 3/4 ingredients.
Red Lentil Dhal
(1) 500g red lentils
(2) 1 onion (finely chopped)
(3) 3 cloves of garlic
(4) Naan bread, or plain boiled rice, to serve
(Pantry: 1 Tbsp oil, pepper, 1 Tbsp curry powder)
Heat the oil in a saucepan, add the onion and garlic and cook for a couple of minutes until soft but not browned.
Stir in the curry powder and lentils, add 600ml of water, bring to the boil, then reduce the heat and simmer for about 20mins or until all the liquid is absorbed and the lentils are tender.
Serve sprinkle with freshly ground pepper to taste.

Smoked Haddock and Ricotta Pie (yummy)
1/2 tub of ricotta
1 fillet of smoked haddock
3 handfuls of Spinich
pack of ready made puff pastry
1)Roll out the puff pastry to about 30x30 cm square
2)fork one half of the pastry
3)use off cuts of pastry to add a 1cm seam around the edge of the square ( stick it on with water), lay on to tray
4)place a layer of spinich on the forked half of the pastry,
5) on top 1/2 of the ricotta
6) then the haddock,
7) then the last of the ricotta
8)and then another layer of spinich, so you have 5 layers
9) Fold the pastry over and seal the edges with a little water,
Place in a medium oven for about 30 mins.
Voila easy pie.Saving for the future of the earth0 -
easy peasy pizza
pantry - 4oz sr flour, 1tsp baking powder, 4tbsps oil, 1/2 tsp oregano
extra - 3 tbsp tom puree, 3oz grated cheese, 3 sliced tomatoes
mix flour and b powder stir in 2 tbsps oil mix with enough cold water to make a soft dough, knead gently, roll out to fit a frying pan, put some oil in pan, add dough, cook 3 mins, turn over, put puree on top, oregano, cheese and tomatoes, season, cover cook gently 5 mins0 -
Dried Pasta
1 tin of chopped tomatoes
1 tin of tuna in brine
Pantry: 1 tsp mixed herbs
Cook pasta as per packet instructions.
In a seperate pan reheat gently the tomatoes, with tuna and add dried herbs.
Serve the sauce over well drained pasta. A sprinkle of grated cheese can be added for extra oomph~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Pasta with Courgettes and Bacon
Serves 1
Pasta
1 Courgette
2 rashers bacon
1 egg
(Salt and pepper and parmesan would be nice if you had it)
Fry 2 rashers chopped bacon in a little oil remove from the pan, fry 1 sliced courgette in the same oil left in the pan and remove when cooked leave oil/residue in the pan.
Cook enough pasta for 1 person and then place in the same pan that has cooked the previous ingredients toss in the bacon and courgettes with the pasta and with the heat off stir in 1 egg to the pasta vigourously to avoid scrambled egg, the heat of the pasta should cook the egg without needing to turn the heat on.
Add salt and pepper and parmesan if available. Yum!
Onion and goats cheese tart
1 sheet puff pastry
4 onions sliced
1 piece of goats cheese
Thyme chopped
(plus salt and pepper, butter and a little milk or egg to brush the pastry)
Make a tart case out of the puff pastry cook until almost brown in the oven.
Cook the onions on a low heat with butter for approx 30-40 minutes until soft and brown. Stir in the thyme and salt and pepper. Place onions in the tart case.
Place goats cheese on top either whole or crumbled and cook for 15 minutes or until cheese has browned.
This is a great thread Queenie, I will try and think of some more.

Easy Shepards Pie-Feeds 3
Minced lamb 250g
Mash potatoe
Tin baked beans
Brown mince, add beans. Put in an oven dish then add potatoe to the top-stick in oven for 20 mins. Easy peasy!
I do also add an onion in with the mince and cheddar sometimes to the top but you dont need either really just perosnal choice.

shonas cake recipe
pantry - 1 cup sr flour, 1 cup sugar, 1 cup milk, 1 egg
extra - 1 cup all bran, 1 cup sultanas
soak sultanas, all bran, sugar and milk overnight, add flour and egg
1lb cake tin, 1 hour, 160oc0 -
1 pkt puff pastry
1 bag quorn fillets
1 carton mushrooms
1 tin Campbells condensed soup
Gently brown the mushrooms and quorn and add the soup - fill the empty soup can out with water and add that too. Simmer for 10/15 mins until the sauce starts to reduce. Transfer to a casserole or pie dish and top with the rolled out puff pastry. Cook for 25 mins at 200c (or until the pastry looks nice and brown)
It's really filling and makes 4 good sized portions - perfect with mashed potato or baked beans0 -
Ingredients
1 butternut squash
2 onions
2 cloves of garlic
From the storecupboard
Ground cumin and coriander
Olive oil
Veg stock powder(Marigold)
Chop, deseed and peel squash.
Chop onions into wedges
Peel garlic cloves
Toss all veg in a bowl with a couple of sloshes of olive oil and the spices.
Pile into a roasting tin and roast at 190c for about 40 mins or until soft and sticky.
Chuck roasted veg into a pan, add water to cover by about 2 inches. Sprinkle on a heaped tsp of stock powder. Bring to the boil and simmer for about 15 mins.
Blend until smooth.
Adjust seasonings (it might need salt) and add more water if too thick.
Just made this up and had it for lunch - was delicious. I used chilli oil instead of olive so it had a bit of a kick;)0 -

I "invented" this last night, with a chopped onion and a chilli in it.:drool:
If you lend someone a tenner and never see them again, it was probably worth it.0
