    Macaroni Cheese and Bacon Frittata.

    100g Macaroni
    6 Medium eggs
    200ml milk
    150g mature cheddar, grated
    200g bacon lardons
    2 tsp fresh chives chopped
    black pepper

    Pre heat oven 200*c
Lightly grease 23cm round dish/20cm square dish
    Cook Macaroni, drain
    Fry bacon until brown
In large bowl whisk eggs and milk, add cheese, chives and bacon
    Mix well, season
    Stir into pasta
Put egg mixture into prepared dish.
Cook covered for 35 - 40 minutes or until Frittata is set and browned

Well i made it with variations of course! I used half of everything and no bacon as i didn't have any handy. I used much less cheese and added frozen peas, fried onion and fried peppers. It was scrummy!:j Nice, filling , and tasty. I would probably add chilli next time, but i add chilli to everything. Great cold too! All in all a total success. I think the bacon would be scrummy in it :D

As i made a 3 egg one i baked it for about 20 minutes and it was perfect. Heated it in the micro for lunch for 1min 30

Ohh is that as simple as it sounds? Im all into not using flour where possible :D

Ye it really is - I like to add finely chopped onion and a little scotch bonnet pepper - yum!

This is the best ever - I sometimes replace the parmesan with strong cheddar and it's fine - parmesan is quite expensive

Warning - the recipe isn't particularly moneysaving or diet friendly but it is far and away the best macaroni cheese!

:( I made this today and it curdled. Anyone have any idea why?? Still tasty but I don't like the texture of it (apart from the top browned bit... yum yum yum)
  • quick question that maybe someone can answer? as this has made me hungry for macaroni cheese!! I have all the ingredients except butter for the white sauce- is it possible to use stork margarine or will it make it taste horrible?
    thanks in advance!

I would use stork in it, shouldnt make a difference although if you are used to it with butter you might notice a bit of a different taste
  • Margarine can be used as can any oil based ingredient but I'm unsure of the main ingredient in Stork; have a look at the contents. If the majority is oil, then yes, use it. The taste comes from the cheese anyway (and salt, pepper and nutmeg if you have some) so the oild doesn't matter as much although butter makes it creamier.
