I have just seen some Prestige muffin trays in Argos for £7.99 and you get a 2nd bakeware piece for half price so I think I may go for the Prestige loaf tin, both for just over £10.
Well, I have just bought the two Prestige items and had a nice surprise.
I assumed you would get the cheaper one at half price but they charged me £4.99 for the bread tin and £3.99 for the muffin tin so only £8.98 for the two.0 -

a proper muffin tin makes a lot of difference to the results you get0 -

Can't remember if I've posted in this thread before but I just wanted to say that I have the Susan Reimer book and it's fantastic. I've probably made at least 3/4 of the recipes and they have all been extremely popular. I seem to be constantly recommending it to people and a few of my friends will be getting a copy for Christmas0 -

I have half a punnet of strawberries left in the fridge that need using up, does anyone know if I use them in the same recipe instead of the bananas they will be ok?
Well, I used the new 'proper' muffin tray and made some strawberry muffins.
I used the recipe for the banana one that I used yesterday but omitted the bananas and added about 4oz of strawberries that needed using up. I also used a 125g tub of strawberry Tesco Value yoghurt instead of the milk but after mixing it looked a bit dry so I added a splash of milk.
The smell of strawberries coming from the oven was wonderful!
They tasted lovely too so I have frozen most along with most of the banana ones othewise I will be looking like the side of a house!0 -

The one I had yesterday was lovely and still warm but I think this one was far nicer being cold and it seemed more moist too, I assume some muffins are like a good curry, taste better the next day.0 -
I did read somewhere that to make your muffins rise better to preheat the oven to about 225deg, put in your tray of muffins and then turn it down to your normal temp (I have been cooking mine at 170deg as I have a new fan assisted oven that I am getting used to).
The other thing I did with the strawberry ones besides that was to fill one of the moulds with water before I put the tray in the ove, I read that that is supposed to help them stay soft on top.
I can believe the second one as that is a breadmaking tip.0 -

Does anyone know if it makes much difference if you use soft brown sugar instead of white?
I have quite a few bags of soft brown that I bought from B&M a while ago and haven't got around to using yet.
It will of course go in the grinder thingy to make it into brown castor sugar.0 -

It will of course go in the grinder thingy to make it into brown castor sugar.... I don't think you'd need to grind it first though, it's usually quite fine already
soft brown sugar's lovely in muffins, particularly things like apple & cinnamon :drool:0
