    Morning! No snow - yay...

    Long boring meeting yesterday, and lunch was sandwiches so I didn't have one. :j Eventually had a pepperami and little cheese block at about 2.00 and then a bowl of home-made tomato soup with some gammon in it at about 3.30.

    Last night I made the butternut squash soup with leek and cauliflower - it's fabulous. Thanks Mazzer (?). It's got a lovely taste and texture. Got some squash left over so may have to make some more tonight and freeze it. Will have a freezer full of soup soon.

    Breakfast - bacon and egg - had coconut oil/vits too
    Lunch - guess it will be soup :j
    Evening meal - usual chinese?

    Lots of green tea and water inbetween.

    Right off to shower, dress and get myself to Durham.

    Soooo glad tis Friday, I'm soooo tired this week, can't wait for a sleep-in!!

    Gers, the roasted butternut squash soup original recipe was from the IPD book, but I tweaked it with leek & cauli & I do think it's better, & we get more of our 5-a-day ;)
    Can I ask how you make your tomato soup?? Lurve tomato soup, infact I love any soup!! :drool:

    My menu for today:
    B - 2 egg cheese & mushroom omelette
    L - 2 low-carb crispbreads with butter & cheese, garlic sausage, HM soup :j
    D - Baked cod with cauli mash, cheesy leeks & green beans

    I'll be having [STRIKE]at least half a bottle[/STRIKE] some red wine tonight, seeing as it's the weekend, plus some S&V peanuts and/or more crispbreads with butter & cheese. I do like a treat on a weekend. :D

    Hello all
    Have had a horrid week with travelling (never mind the weather, the power cable came down and smacked into the train I was travelling in on Wednesday!)
    so have eaten lots of junk (all be it sugar free 'fake' chocs and biscuits plus nuts its hardly healthy!)
    More importanly Tesco seem to have stopped stocking S&V peanuts - sob. I've just had to place a delivery order with Asda to get hold of some!

    I haven't eaten anything yet and really ought to sort something, and get on with tidying the pigsty that is my house, but all I really want to do is curl up in front of the telly.

    Sorry if I'm spreading my gloom. Hope you are all having a better week than me.

    Hope you ok, what a scary thing to happen, hopefully you weren't injured.
    And Tesco not selling S&V peanuts?! :eek: Hope you get your Asda delivery soon, I have to have a stash in the house, I love 'em, so completely understand your sobs!! :D

    I'm intrigued with the butternut sqash soup, saw the rather rude looking things in asda today and they were only 78p or summat so sounds worth a punt. I've missed the recipe I think, could you put me onto the post or put it up again, please? I will deffo put it on the list. To roast or not to roast? It all sounds like a nice adventure :)

    I've bought half a field's worth of winter veg so will be making a stew and possibly something based around gammon and cabbage? (still in thinking stage but reckon it could be v nice.). Also on the cards is a creamy chicken korma. Got some whoops drummers in asda today so once roasted will make a coupla portions of the curry to freeze over sqaushed cauli for lunches. Truly LC comfort food and v welcome at work when it's cold like it is :)

    Took a holiday today as needed the boiler fettling. The tap you fill it up with snapped off in my hand the other day and it seemed to have a drippy leak too. Result - too low pressure. Was worried about it just switching itself off whilst I was in the shower :eek:

    Anyway, nice plumber - only available daytime - charged me £70 for new tap connection and filling the system with drip sealer. Considering he charges £40 for call out and was with us for well over an hour think I got a good deal. Also, very prompt and pleasant service! To have the number of a good plumber is in itself a boon, feel blessed :rotfl:

    All that means I spent a long few hours cleaning and tidying the house yesterday - don't encourage visitors but no choice this time :rotfl: And now find myself having done all the chores, with a clean house, replete with Asda shop for cooking and Tesco online for delivery of heavy stuff for Tues, so set for a relaxing weekend! :j

    I'm off to mix a vodi lime soda and play online for a bit.

  • all these recipes sound lovely. If I find a spare few mins I'm going to go through old posts for all the recipes posted... mmm

    I made a lancashire hot pot minus spuds and its in the oven now roasting away. Was some cheap lamb I got in tescos - reduced because a few bits had oxidised and gone brown.

    Made usual casserole base and then topped with mashed cauli and onion - so pretty similar to normal

    Hopefully it will turn out well!

    Starting officially tomorrow but might not be such a shock if I stay LC for dinner!

    Hello all, Sweet didnt realise you had put cauli in your soup, will give that a whirl next time.

    Hanspan, thats all i've been doing is curling up in front of the tv, glad you weren't electrocuted ;) I've not tried the s&v peanuts and dont think i will, will prob end up being another addiction to fight :rolleyes:

    Not been too bad today, but could really do with a few days of being strict.
    Not weighed for aaaaages, dont really want to either, saw some more pics of me from our xmas do and i look huge icon9.gif

    Was only a few months ago i was having compliments about looking slim icon9.gif
    Anyway, onwards and downwards as we say, maybe by summer i'll be having compliments again.

    I just roast the tomatoes first to enhance the flavour and then add to sweated onion and garlic. Then add stock and cook for a short while. Then blend. Sometimes a tiny bit of sugar takes away the bitter taste but I find that roasting with a few herbs chucked in gets a great taste. You can skin them but I just leave it on and then blend really well. A pour through a sieve will get rid of the bits if they bother you.

    When serving it I add either some sour cream and chives of a dribble of double cream. I also add chillies to most things, it gives a bit of heat in the winter and is meant to get the metabolism into a higher gear - don't know if that's true. The chillies I use are from a little jar of chopped chillies from Waitrose, a little indulgence but well worth it.

    Just had a bowful of the BNS soup for my late lunch/early evening meal (with sour cream and pieces of boiled gammon in) and it is really lovely. Thanks.
  • This is a rough guide to the soup, Mercy
    For my best tasting soup (imo ;)) I used 6 level tsps of Marigold reduced salt vegetable Bouillon stock powder added to 1 & 1/2 litres of boiling water (or whatever your stock cubes say), 1 finely chopped leek & a few florets of cauliflower (I think adding the cauli thickens the soup up). Add this to the roasted squash & simmer for about 30mins & then blend together.

    I quarter the squash lengthways, scoop the horrible seedy pithy stuff out & then use a pastry brush to brush olive oil on the flesh. Roast for about 45 minutes on 200, preferably whilst there's something else cooking in the oven, to be a good MSE'er ;)
    jordylass added a note that, according to Nigella, you don't have to take the roasted squash off the skin before putting it in the stock, just blend the whole thing with the stock/leek/cauli.
    I didn't try that this time as I forgot to wash the squash before roasting.
    Also, I didn't add as much cauliflower this time & it's noticeably thinner in consistency soup, still bloomin' gorgeous though!!
    Another also, you probably don't have to finely chop the leek because it's gonna get blended anyway, I just did that the first time I made it & have stuck with it.

    Days never pan out the way they are planned! Not a whinge though. Had a good time at Durham, great meeting and positive things coming out of it. Collected my post from school and then had a natter with a colleague. Now at home with my feet about to go up and my head about to go down. Forsook Chinese takeaway as a bit snotty so want to keep that at bay.

    Tomorrow need to get ready for my week away for work, heading south on Sunday afternoon and not back until Thursday evening. It's all about what to wear!

    Oh, bought a new suitcase for my Oz trip - bright red hard case from M&S. Already got the small one for work/weekend trips and now got the medium size. Won't miss it on the luggage conveyor belt thingy!

    Still no booze. :beer: Will be difficult when I'm dining with colleagues on Monday night in our really lovely hotel. :rolleyes:
