    I did as well...

I love your meal plans, Boodle - everything always sounds so tasty!

Can I ask how you make a mushroom wellington, please? I know I've got 'shrooms in my veg box next week and I'd like to do something interesting with them this time (usually I just cook them with garlic, or with bacon and garlic, and serve with pasta - it's lovely, but getting a bit boring now!).

    Thank you! :)

Thank you for saying so x

We all thoroughly enjoyed the wellington - which was actually a trial-run for Christmas day. It is huge and very filling! Looking forward to the last half of it tomorrow with chips and some yummy stir fried greens :D I had some mushroom mixture and pastry trimmings left over, so have also made some mushroom puffs to have at tea, and there is still enough mushroom "pate" for DH's sandwiches tomorrow. This is what I did:

Cooked 100g red lentils and 100g green lentils with a bay leaf and 1 chopped onion for 10 minutes at a boil, then 15 at a simmer. Meanwhile, I fried 2 portobello mushrooms, half a punnet of button mushrooms, and half a punnet of oyster mushrooms (all chopped) but I think any mixture would work, in some veg oil with chopped garlic. I then whizzed the mushrooms up with my stick blender. I mixed the cooked lentils with 75g oats, 2 tsp dried sage, 1 tsp dried thyme, 2 tbsp brown sauce, 1 tbsp tomato puree and 1 tsp marmite. This was shaped into a loaf shape on top of rolled-out puff pastry lying on a baking sheet. I spread the mushroom mixture over the top of the "loaf", then brought the sides up to enclose the "loaf" with pastry. This was baked at 200C for 35 minutes.
Love and compassion to all x

    Hi everyone

The next couple of weeks are going to be a little bit tight due to having to scrape together the deposit to get a new car so my menus are going to be made up from what I have in with as little as possible bought in so here goes

Mon Jacket pots, baked beans and cheese
Tues Home made cornish pie, peas and gravy
Wed Sausages, roasties, carrot and swede and gravy
    Thurs Lasagne
    Fri Fajitas
    Sat Fish and potato wedgies
Sun Roast (not sure what type yet )

As usual breakfast will be toast or cereal
And lunch of leftovers, sandwiches or soup

    Have a good week everyone

Changed my meal tonight to Pasta e Fagioli (pasta fazool!) because it sounds delicious! Whoopsied chicken can stay in the freezer until Friday.
