That sounds yummy! I should think it's fine for a few days in the fridge.
Aww thanks JaM, it may seem a bit of a stoopid question, but I have always been a bit suspicous of kidney beans etc, and it has taken all these years (and this thread) for me to get round to trying them! We have tried this salad now and really like it so will make it again, I am always on the lookout for things that can easily be taken to work for dd, especially during the warmer weather.

The only thing now is during the 70`s I saw a report in the newspapers that kidney beans damaged a bit of the brain every time you ate them, so I never made chile con carne in my meat eating days. I don`t have enough brain cells as it is!

Does anyone use supermarket falafel mix? , cant recall the brand

I do make my own, but sometimes use the pack thats in the main supermarkets for £2.80 or whatever , anyway local asian supermarket had three different types, all £1.50 each. Got 2 to try. Has anybody else tried them?

One was Cortas , made in Lebanon

the other was second house products, also from Lebanon

Design your own vegan dinner loaf

I thought this would be useful. It is American so the measurements are in cups and some of the ingredients have unfamiliar names (google images is helpful), but I think it is a fab idea with endless possible combinations. I'm planning to try it out soon.

The Vegan Lunchbox site mentioned is well worth a look too;)

I've never heard of kidney beans destroying brain cells! I'm sure more research has been done since the 70s! The only thing with beans is to boil them vigorously for at least 10 minutes before turning them down to a slower boil or simmer to finish cooking - it destroys any toxins.

Thanks JaM, I am sure it was just a 'scare story', there seems to have been so many of those over the years. Now I am a lot older, and maybe a teeny bit wiser, or perhaps I should say a lot more cynical! especially when I think of some of the diets advocated over the years that might be considered detrimental to health these days.

    Hey hey hey,

Hope all's ok. I have FINALLY baked some decent cakes :o, and thought I'd share the traditional rock cake recipe I've veganised:

    8oz self-raising flour
    3oz sugar
    1/4 tsp salt
1/4 tsp mized spice (I used cinnamon in it's place)
    3oz Pure marg
    3oz dried fruit
    silken tofu as egg replacer
    soya milk
(the above two ingredients I added as I needed to, going for a stiff paste consistency).

Put on a greased baking sheet in rocky heaps and bake 20 mins at 200 Celcius.

Vegan food stuff I have learnt this week: Iceland pink wafers (Pink Panther make I think) are vegan! Nans everywhere stock piled pink wafers, so they'll bring back some good memories :T

We moved office today and to celebrate me and fellow vegan workmate are holding a tongue-in-cheek office warming on Tuesday....with four of us (two vegans, one veggie and a non-veggie) cooking recipes inspired by this forum!

Potato curry + veggie burgers + balsamic fudge + cookies

Sad animal news - we have a pond with 16 fish, but one has died this week. Also we have what seems like hundreds of baby frogs, which jump out and then die because they can't get back in. Am doing what I think is the right thing by putting the dead ones on nearby soil.

I've now been vegan for six months and two days.....

My MIL is obsessed about the way I cook kidney beans, saying that they are toxic. I don't eat them much because they flare up my, er, intestinal troubles. I feel like saying to her that the rotting meat in her stomach probably isn't doing her any favours. Or the cigarettes she smokes

I know what you mean Joyful, apparently women shouldn`t eat too much red meat anyway. I used to eat meat, gradually becoming vegetearian and now vegan, as have my children, although they would really only ever eat a little chicken breast anyway.

I used to love watching cookery programmes, but now find that they leave me feeling sick and very upset when they are cooking meat. As for the programme on how some farmers are being good by allowing male calves to live, rather than shooting them at birth, then alowing them to roam in the fields and selling them for rose veal, it made me want to cry. Thank the lord for Pure.

    Hi Zippy,

Do you mean one for just noodles like this one: cold sesame noodles or more of a stir-fry type thing with vegetables and noodles? I love cold noodles but other than that I tend to only use them in japanese style noodle soup. Much like the wagamama bowls of noodles with a miso base, ginger, spring onions, fried tofu and lots of lovely veggies. No recipe required for that really which suits my style of cooking. :D

On a different note I tried raw cake! I obvously don't mean normal cake batter that hasn't been cooked but a sweet cake-style dish suitable for those following a raw food diet.

I've been reading up on raw foods and I'm interested in getting more raw stuff into my diet (although I can't imagine ever going totally raw). I've started having a green smoothie for breakfast and sometimes another in the afternoon and I'm totally loving it. All that fresh fruit and greens really makes you really energised.

Anyway, the cake was an experiment for OH who wanted chocolate and we followed the recipe from here: http://greenandcrunchy.blogspot.com/2008/11/rawsome-raw-mud-pie.html

I love this blog and am having a great time noting down ideas for meals and snacks. The cake was amazingly cake like and totally sweet and chocolatey despite no sugar at all!:T Totally recommended. :D
