    For those who like pizza have you tried potato & rosemary pizza .
    You just mix up a pizza mix (or make it in your bread machine ).
    About 300 g ( for 4 people ) new potatoes, thinily sliced.
    2 sprigs rosemary
    olive oil

    Make the pizza mix up ,and leave it to rise. Cook potatoes for 3-5 mins until just tender. Drain .
    Chop up rosemary stalks and toss with potatoes & oil.
    Arrange potatoes over pizza, overlapping and add loads of seasoning & touch of oilve oil.
    Bake in oven for about 20-25 mins and then eat .

    Today was my cooking day. I am lazy with a capital L and so when the urge to cook takes me I cook loads.

    Today I cooked:

    16 portions of lentil & chickpea curry (my current favourite meal)
    6 portions of veggie sausage & butterbean hotpot
    4 portions of lentil bolognaise sauce
    6 portions of 3 bean chilli
    4 portions of chickpea & bean stew

    So that's my food sorted for the next month :j
    Only took 3 hours too..
    Oh thats a fantastic idea.I tend to eat junk food as I get tired easily and then dont feel like making good nutritional food.Plus I am on a tight budget- aren't we all.
    Could you post the recipes or ideas from these recipes , I would be really grateful.
    I have a slow cooker but havent really being using it lately so maybe could do the stew and curry in that .

    Hi, I don't really do recipes, more of a chuck it in and see and they all begin pretty much in the same way but here goes:

    Sausage & butterbean hotpot:
    Grill 8 veggie sausages
    In big pan throw in whatever veg you have lying around (I usually use a few carrots, some peppers, mushrooms and onions oh and some frozen spinach) and cook with some garlic for a bit.
    throw in a couple of tins of tomatoes, 2 tins of butterbeans, the chopped up sausages, 350ml of stock and some Thyme or tarragon.
    Simmer for about 30 minutes.

    Bean Stew
    As above but without the sausages or stock
    Basil instead of the Thyme.
    3 tins of whatever beans you fancy instead of the 2 tins of Butterbeans (I used haricot, chickpeas and cannellini this time)

    Chilli
    Pretty much bean stew but with kidney beans and chilli powder.

    Curry
    same base mix of veg, tinned tomatoes & garlic.
    I precook some green lentils and add them along with either chickpeas or beans and use Pataks curry paste which I think is vegan but someone more knowledgable than me will know for sure.

    Lentil bolognaise
    jar of passatta, basil, red lentils, onion, garlic, simmer until lentils are cooked.

    Not very exciting I'm afraid, basically I live on pulses, tinned tomatoes and various herbs and spices :confused:

    Thanks suep for the websites, i ended up having to shop before I got home so did do curry in the end. One Rogan Josh type with tofu, broccoli and aubergine and one spinach and chickpea, spicy bombay potoatos as a side dish all served with rice, homemade naan breads and lime pickle. It went down really well and my two friends went home groaning because they'd eaten too much!

    The websites you gave me look great though, will definately be having a proper look through for inspiration next time.

    Interesting that two of you have found swedish glace in Tesco, I've looked in there, sainsburys and Asda but no joy. Will have to just keep my eyes open and maybe try to find a local health food store.

    Sparklewing, my OH and I also quite often do batch cooking for the freezer, loads of chilli, curry, soup, and all sorts. We often spend weeks at a time staying in other peoples homes for my work and it's great to just bring a load of stuff from the freezer, rather than trying to cook a meal not knowing what store cupboard stuff they don't have or lugging all my stuff from house to house. Your sausage & butterbean hotpot sounds lovely, think I'll give that a try this week, thanks!

    Bolokneese
    (Serves 4-6)
    Prep time: 40 mins


    Ingredients:

    1 Lge Onion

    10 Lge Mushrooms

    4 Cloves Garlic

    125 g Textured vegetable protein

    1 400 g tin Tomatoes

    2 Tbs Tomato puree

    2 Tsp Marmite

    280 ml Vegetable stock

    Black pepper

    Method:
    • Re-hydrate soya mince with stock and add marmite (takes about 30 mins)
    • Heat oil, fry mince until browning and set aside
    • Fry onion until soft, add mushrooms, garlic and fry for further 3-4 minutes.
    • Stir in tomatoes and tomato puree and heat through.
    • Add remaining ingredients, seasoning and simmer for 15-20 minutes
    Nice with:

    Pasta

    Baked Potato


    (Freezes well)


    Chuck in a few carrot slices and it makes a splendid base for Shepherd's Pie;)

    I just wondered if anyone lived in the Salford/Manchester area and could reccommend anywhere that's good for vegan/veggie 'cheat' foods? I'm especially after some Redwood's 'Cheatin Chorizo' - their website stockist link isn't working! :mad:

    I thought I'd do a quick bit of nutritional geeking over breakfast. One the questions I've been asked most since I announced my changed to veganism is 'but where will you get protein from?' Now this was probably the thing I was lest worried about since I was already fairly aware that pulses, beans, lentils, nuts etc all provide plenty of protein but I thought I'd do some research and here is what the Food Standards Agency's Manual of Nutrition has to say in their section on animal versus plant proteins:

    "the nutritional advantages of animal foods over vegetable foods in practice lie more in the presence of associated nutrients such as vitamin B12, iron and retinol (pre-formed vitamin A) than in protein."

    Some quick numbers of average protein content per 100g, uncooked:

    Whole cow's milk - 3.2g
    Cheddar cheese - 25.5g
    Beef, stewing - 20.2g
    Chicken - 17.6
    Dired red kidney beans - 22.1g
    Peanuts - 25.6g :T
    Bread white/wholemeal - 8.4g/9.2g
    Spaghetti - 12g
    Steamed tofu - 8g

    I think I'm less amazed about how protein-packed peanuts are than how little protein beef is. I think when you're eating meat you really tend to think of it as a bit chunk of protein when, of course, its full of other things too.

    So I'm pretty happy protein-wise. Even my lovely breakfast of porridge with banana and brazil nuts is providing me with some protein. Coming soon - the real vegan issues: B12, iron, calcium, vitamin D & iodine. :rolleyes:

    I hope you don't mind me butting in, I am not vegetarian or vegan but very interested from an ethical and health perspective. :confused: The "Manual of Nutrition" is an excellent text, if rather dry! Anyone who exercises regularly might also find "Vegetarian Sports Nutrition" helpful (it does also deal with vegan diets, tho it's referred to as 'pure').

    Beef appears lower in protein because it also contains quite a lot of water and some fat. A better comparison is to look at plant foods in their cooked state as you could easily eat 100g of beef in a sitting if you so chose, but might not manage 100g (dry weight) of barley as it absorbs so much water in cooking! :p

    The main issue with protein from a health perspective is not so much getting sufficient (as someone else pointed out, the West eats too much animal protein) but it is more about timing. The body cannot store protein as it can fats or carbohydrates, so if one doesn't eat protein-based foods at each meal the body may cannibalise your muscles to provide amino acids. This is just as much a problem for carnivores as for vegetarians and vegans - how many women have tea and toast for breakfast and a salad sandwich for lunch because they are dieting? ;)

    In my work (health-related fitness/ associated diet and nutrition issues) I recommend everyone have a mixture of protein and carbohydrates at each meal or snack throughout the day. As this combination is found in many wholefoods, you might reasonably argue a well-read vegan is one up on a faddy dieter! :D

    I would advise a vegetarian or vegan to have combinations of sources at each meal or snack, as your breakfast perfectly illustrates. I would not suggest that any meals are simply veg and a carb as it's not balanced - insufficient protein, little fat and probably too few calories as well. In theory it's possible to play catch-up with amino acids at a subsequent meal, but I don't think this is feasible without being incredibly organised and eating very frequently.

  • I went to the grocers yesterday and managed to get loads for the money I spent; £20.09 which is a lot of money for me to spend on food (for some reason it doesn‘t add up to £20.09 but £20.08 below and I‘m not sure why as it adds up correctly on the receipt :confused: . Strange as I know they defiantly did not overcharge me). For my money I got; 505g of raw walnuts and hazelnuts for £2.52, 250g of raw brazil nuts for £1.20, 2 coconuts for £1.00, 550g of pineapple for 89p (once cut up), 2 Chinese pears for 25p, 900g of apple for 50p, 1kg of cut up pears for 45p, plantain for 39p, 925g of cut up banana for 64p, lettuce for 75p, broccoli for 20p, mangos to cut up to freeze for 600g for 40p, 3 200g packs raw dates for £1.20, 2 bunches of spring onions for £1.18, 2 cucumbers for £1.50, 740g of tomato for £1.61, 3 large peppers for £2.04 (which is rather a lot I know), celery for 69p, a bunch of fresh spinach for 69p, 275g of strawberries for 99p and 500g red grapes for 99p :T .

    I did a nearest like for like comparison for these online at Mr S and the price came up at £29.69 and that did not include fresh plantain or Chinese pear :eek: .

    Basically all the fruit is for smoothies which will work out cheaper than supermarket ones and indeed buying the fresh produce from them to make it lol. Your local grocers will make being vegan relatively cheap. I saw loads of bargains so bought lots and froze most of them :rotfl: . The nuts though for example cost me £3.72 for all of them and will last me 2 weeks to a month, depending on how fast I eat them hehe, with being kept in a cool cupboard.

    Its all about finding the best place in price for the produce you buy. Your local health store for example may not be the best place in price for pulses but your local oriental store may be (and probably is). My bet however is that the supermarkets are not going to be the cheapest but you local/independent store/grocers will be for what you are after most of the time. That and at the moment your local stores etc need you more than the multimillion empires that over run our world!!
