Going vegan......old style?!

    Anyone got any super-easy culinary wonders for the just got home from hell-at-work and need to eat conundrum?

    I usually leave home at 6.30am and quite often don't get in until after 9pm, so my meals have to be very carefully planned... and when they are, I lose weight, when they aren't I eat junk & get fat :o ...

    If I get in before 8pm I'll prepare breakfast (fruit, homemade muesli & yogurt ... remember I'm not actually vegan ;) , but this can be replaced with soy yogurt or fruit juice as it's left to soak overnight) and lunch (salad of beansprouts, tomatoes, salad leaves, spring onion, grated carrot etc with a bit of pasta and flavoured/smoked tofu or avocado and a few sunflower or pumpkin seeds) while getting supper.

    Tonight, for example, I had a baked potato with ratatouille. I don't usually eat carbs in the evening, but had forgotten to put any in my lunch, so it seemed sensible!

    In winter my quick suppers are generally a vegetable soup with lentils or beans in it. In summer I'll usually have a big salad with some hummus or similar pulse-based dip. Both of these can have carbs added to them if you need them.

    Thanks for the nutroast recipe OWEI. I shall haveto ahve another atempt at nutroast. I seem to have a curse where nutroasts are concerned - they come out too runny, too thin, nuts too chunky or fine, etc etc. But I shall persevere and one day I shall conquer the nutroast!


    You should try the one on parsleysoup.co.uk. It's the one I use and it's really tasty. So far the only recipe on her site which I didn't like was the gingerbread men - no way on this earth was that mixture going to be able to be cut into shapes!

    Oh, and her sticky toffee pudding is heavenly!

    I was e-mailed a list of recipes from the Vegan Society and have made a few things off there. The moussaka was very nice, although instead of aubergines I used courgette and potato (which I par-boiled first - we don't like aubergine in our house).

    Yesterday I made the custard creams, and they are really, really, delicious, especially the next day. It does say to make the mixture into small balls, but really they need to be miniscule balls as they grow when they are cookd - my biscuits are huge!!!

    Pesto

    (Makes ¾ jar)

    1.Blend all ingredients together.
    2.Put in sterilised glass jar in the fridge, adding a small 'cap' of olive oil to prevent air getting to the mix.

    If I see a reduced Basil plant when I'm doing the shopping, I'll buy it and make pesto. It lasts for ages and tastes much better than the shop bought stuff.
    Don't forget to sterilise the jar first - years ago I forgot and weeks later came to use the pesto only to find a huge grey lump of mould on the top.
    I usually seal the jar with a waxed disc (burger maker type).

    For a quick meal - fry whatever veg you have to your taste, cook some pasta/noodles - add a couple to tablespoons of the pesto to the veg and pasta, mix and serve.
    Bingo - tasty, easy, quick and cheap.

    Ideal for when it's freezing cold and your team has just lost to a bottom of the table side!

    Today I am liking https://www.!!!!!!!!!!!!!!!!!!!!!! they label the products on the site so it's easy to see which chocolate bars are vegan woo! (I'm having my first craving for non vegan food today, I want proper milk chocolate dammit!).

    Ok it hated my link. It's the ethicalsuperstore site. they do LOADS of vegan stuff food, sweets, toiletries, cleaning stuff. And you can bulk buy stuff too.

    Oh my goodness! How on earth do you cope with that? I thought my long days at work were annoying (up at 6am out of the house at 7am and back after 6pm) but that's mad! I would be living on ready meals if I was doing that so my hat goes off to you being so organised (thre's no hat-type smailey so have a beer... :beer:).

    Today's lunch was even more of the chilli in with some extra mushrooms pepper slices, a drizzle of omega oil and a grated carrot (i felt the need for something raw) all bundled up a soft wrap. Yum!

    My fallback fast meal favourite is usually a baked spud with beans and maybe a bit of grated cheezely but sometimes I swap and have a sweet potato with vegan marg on top and a salad.
    Whenever I make up any soups or stews I always make extra and freeze it down, so on days when I cant be bothered to cook I just defrost the first thing I grab from the freezer.

    I am sadly excited by the online shop GoodnessDirect. Vegan hairdye and toiletries, vegan frozen pies! vegan EVERYTHNG :)

    Most stuff is quite pricey (isn't all ready made vegan stuff) but I might buy a few things, I reckon if I'm making most things cheaply at home then I can afford to splurge a little on some tasty vegan products every now and again. Chestnut pie sounds lush! Tandoori burgers are also appealing.

    Booja Booja maple & pecan fake icecream! (£6 a tub though.... would it be sad to ask for icecream for my birthday?). Mmmmm Toffuti ice cream cake, only £2 that's more like it!
