  • some really good recipes on this thread - i am not vegan but would like to be a bit more vegan for health, ethical and environmental reasons.

    in terms of getting nutrients from veg, have read that comfrey is a good source of B12 and other vegetable are too. am aware that there was some concern about people eating comfrey. have also read that purslane is a good source of omega 3. does anyone know anything about either of these, or other vegan sources of these nutrients?

    Fortified foods such as veggieburger mixes, vegetable margarines, soya milk and certain yeast extracts, stock, cereals etc...
    I also think seaweed but dont hold me to it?!?

  • I'm off to Holland & Barrett tomorrow for a tub of B12 tablets, some Seven Seas vegan vitamins and........

    CASHEWNUT BUTTER

    I luuuuuuuuuuuuuuuuuuuuuuuurve cashewnut butter but it's very expensive so hardly ever buy it. I am ridiculously excited. Going to investigate their other vegany type things too.

    Have ordered sushi rice and seaweed sheets in my Sainsbury order this week so I can make my own sushi. I also lurve veggie sushi. :j

    I'm off to the doc's this week to have a b12 deficiency test :(
    I want those injections though haha I like needles don't ask me why???
    I used to give blood all the time hahaha but im not allowed anymore :( (since i had transfusion).

    Going to see what other tests i can get the doc to do while im there hahaha

    You'll probably find that the vegan multivits already have B12 in them.

    I love red lentils & tend to chuck them into lots of stew & casserole type meals to thicken & increase the protein & nutrition. My husband (who is an omnivore) makes a wicked dahl with them which is probably my favourite way to eat them.

    Sorry Dobie I didnt get online yesterday, due to trying to finish a gripping book;) Yes its more like a tasty mush, although sometimes its dryer than others and the crispy topping is lovely. Yes I chuck them into stews and soups too.

    The only reliable sources of B12 are fortified foods and supplements. It's my understanding that B12 deficiency is very rare, but the consequences are so serious (and can be irreversible) that it's not worth risking. I take a vegan supplement that is available from the Vegan Society online shop. This page on their website has some very good info about B12:

    Holland and Barrett also do there own brand vegan multi vits and cheaper than seven seas.

    I think I have a milk intolerance so am cutting it out of my diet.
    Does anyone have any recommendations/advice about dairy free cheese esp parmesan substitutes as I eat a lot of pasta.

    just about to try soya milk today....the alpro one

    You can get a vegan parmesan substitute in health food stores. I haven't tried it myself, so can't recommend it.

    Bread crumbs sauteed in olive oil with a bit of garlic are a traditional Italian topping for pasta -- much cheaper than parmesan too.

    And here's a parmesan substitute made from almonds -- from the cookbook Veganomicon:

    Almesan

    1/4 cup slivered or sliced almonds
    1 Tbs toasted sesame seeds
    1/8 tsp salt
    1/4 tsp lemon zest

    Combine all ingredients in blender or food processor and chop until it turns to tiny crumbs.
