  • I bought the book vegan with a vengeance which is full of 'delicious cheap animal free recipes'. Unfortunately they all seems to involve tofu or something called tempeh.

    I' more scared of tofu than I am of mooncups lol. I've never tried it before it looks..... wrong. But I'm going to go and purchase my first lot on Monday any suggestions for best type? And this tempeh stuff I've googled it and it looks a lot like tofu. Would I get it in Holland & Barret? Sainsburys deny the existence of it :D



    You could try tofu in a stir fry - drain it slice it maybe marinade it in soy sauce first.
    Health food shops sometimes sell ready marinaded tofu - not as cheap though. :)

    any suggestions on what to do with asparagus... I've never had it before it just doesn't look edible but i dared myself to buy some today...

    no development on the mooncup!!!
    didn't find one (get it mail order)

  • Asparagus Risotto

    18 oz asparagus tips
    1 T olive oil
    1 onion, peeled and sliced
    12 oz risotto rice
    1 1/2 pt hot stock

    Saute onion in oil. Take off asparagus tips and set aside. Cut tender parts of stalks into 1 cm chunks and add to the pan to cook. Saute 1 minute. Add rice and saute a further 2 mins. Add stock little by little, keeping it hot while it waits to be added. Put in asparagus tops with the last of the stock.

    Serve with a beany salad

    Non vegans can grate cheese on top

    By quite I mean does the floor count?

    Trial and error! :D I kept a bit on at first as I was scared I would lose it, but after a while I just cut the whole thing off.

    I love it so much! My fave vegetable. However think it's a bit of a marmite situation ie you'll love or hate it! I tend to steam it then just drizzle a bit of olive oil or dressing on it, or use it to top pizza is a good one, with some avocado, or cut up and used in salad, or if you have a george foreman grill it, or if not fry/roast it and it goes soft and crispy. Yummmy!!

    Oh by the way guys i tried this today http://www.chewthecud.co.uk/creamy_mint_chocolate_delight_vegan_tofu.html
    I was right it tasted even better than it looks!!!!

    And I made too much of the choc tofu stuff so i made a pudding with the extra.

    I crushed chocolate cookies mixed with a little soya butter and put it in a circle cutter pushed it down.

    Then I mixed the chocolate tofu mix with 3table spoons of my home made liquor.
    1 can coconut milk
    2 tbs brown sugar
    2 tbs chocolate syrup
    1 tsp vanilla extract
    1 tsp ground cinnamon
    3/4 cup whisky (or more/less!)
    Whack em all in whisk but don't let it froth. Keep it in the fridge in a brown/green bottle if you have one.

    Then I put this inside the ring on top of the biscuit mix.

    I finished it off with a cherry compote.
    I make this using sugar water and frozen cherries with a pinch of cinnamon.

    It was good enough to serve in a restaurant. :D

    To make it really posh you could add half a cherry a drizzle of chocolate and a light dusting of cinnamon.

    I challenge anyone to eat it and say vegan food is boring!
