    betterlife, I'll definitely be giving your HM salsa a go. I could use it with lots of different things, so would be handy to have a stock of it in the freezer. Do peppers and things freeze ok?

    Do you think the potato soup could be made with instant mash, instead of proper potatoes? I hate the grainy, bitty texture of normal mash, though I imagine it wouldn't be too noticeable in soup.

    I haven't explored all the threads mentiond yet as I have a veggie fiance. Always on the look out for cheap options, although I do find veggie cooking cheaper than my meat cooking.

    One quick favourite is a vegetarian chilli
    Fry an onion
    Add a tin of mixed beans and a tin of tomatoes, and a tsp of hot chilli powder. Simmer for 10 - 15 mins and serve with rice. If you have any left over vegetables from the previous day you can add to the pot whilst simmering.

    nowt wrong with that! we've always had a chest of drawers full of spices so i'm just used to doing it from scratch but i have used the ready made fajita spice packets and they're very good!

    re: fresh mashed potato. have you tried mashing in a bit of cream cheese? it's loooooooovely
  • i'm starting to try and cook more from scratch and i'm also veggie. so my main concerns are eating as cheap as possible but also for it to be tasty and healthy. so , does anybody have any veggie recipes? prefereably for main meals including a source of protein, whether beans/pulses/dairy/tofu/soya/etc. prefer ones that have been tried already, any i like the sound of i'll try and then report back with how it tasted!
  • For my tea last night I had mixed bean casserole with a baked potato (I had some bread in the oven at the same time too!) Easiest thing ever...

    Slice an onion and a large carrot, you can use any other veg too, I used up some parsnips that were looking a bit sad! (If you use green veg add it towards the end or cook it seperately, or it will go icky.)

    Rinse some tinned beans, 2 or three types, I used chickpeas and cannellini beans (1/2 tin of each, freeze the rest), kidney beans are good too and you can often get them in supermarket value ranges.

    Bung the veg and beans into a casserole dish with a tin of chopped tomatoes and a little water, add mixed herbs and salt and pepper, cook at about 200 degrees C until the carrots are cooked (about 45mins - 1hr).

    It'll freeze well too, I have two portions frozen for another time, it's good with mash or rice too :D

    I got a fab book in the charity shop few weeks ago called" The student vegetarian cook book, eat well without meat , mixer or money" bt Sarah Freeman.
    Im not a student but though id try it very good actually There is even a section called "when your realy broke"
    isbn number 1-85585-140-7 you try buying this book or similar

    POTATO PIE

    We have this regularly in our house and its yum

    Scrub a couple of potatos clean - leave skin on for extra fibre
    cut the pots into circles
    cut an onion into circles
    Now you begin layering - for 1-2 people use 1 tin of baked beans a family might need 2 tins of beans

    layer of pots
    layer of onions
    layer of baked beans
    layer of pots
    layer of onions
    layer of beans
    final layer of pots
    put sclices of tomato on top of pots to stop them crisping up too much and cheese if you like

    BAke 200c for around 1 hour

    I do baked potato with tinned sardines.

    Once the potato is baked, scoop out the potato, mix with the sardines, and scoop back into potato skin, and serve with quiche.

    This is one of my favourites!

    shepherdless pie

    400g continental lentils
    6 carrots diced
    2 medium onions chopped
    2 sticks celery chopped
    1 leek sliced thinly
    1 tablespoon tomato puree
    3 stock cubes
    about 1.5 litres water
    tablespoon dried mint
    a little cornflour or instant gravy granules
    about a kilo mashed potato


    its a bung it all in the pan(except the gravy granules /flour) and cook until lentils are soft type of recipe i( use a pressure cooker) then i thicken with the gravy granules/flour

    Then strain the lentil mixture reserving the gravy put the lentil mixture into an oven proof dish top with the mash and bake in a hot oven until browned
