    Stephen - Thank you for the Spanish Omelette recipe, I'll definitely be trying that. Could you possibly link me to the Pasta & Cottage Cheese Flan please? That sounds like something I'd like :)

    PASTA & COTTAGE CHEESE FLAN

    Makes about 0.75L

    INGREDIENTS

    1 packet of pasta in sauce
    Water, according to the instructions on the packet
    1 egg
    200g tub of cottage cheese
    Ground pepper to taste

    METHOD

    Make up the pasta in sauce, according to the instructions on the packet but replacing any milk with an equal quantity of water and omitting any butter.

    Break the eggs into a bowl and pick out any bits of shell. Mix up the eggs. Add the cottage cheese. Mix up again. Season with the pepper.

    Put the pasta and sauce into a flat ovenproof dish. Level off the surface. Leave to cool until the sauce has thickened. Put the egg and cottage cheese mixture on top. Spread to cover the pasta.

    Cook in a preheated oven at 180°C, 350°F, gas mark 4 for 20 to 30 minutes until golden on top.

    ADDITIONS & ALTERNATIVES

    Put a sliced tomato on top. Use ‘quark’ instead of the cottage cheese.

    I made this last night, along with my spiced basmati rice recipe. It was really yum and family enjoyed it. Had whoopsied coriander. Also saved on £, used a can of toms instead of fresh ones, as my brood like their food quite wet! A really good recipe. Thank you !

    When I first started to learn how to cook for myself, I found the following book really helpful; full of easy, cheap and very effective recipes. In fact I still use it now!

    The Really Useful Vegetarian Student Cook Book by Silvana Franco, ISBN is 1-85391-459-2.

    I have already reported that this is delicious and family enjoyed it very much. When I went to the fridge this morning the leftovers had thickened rather. I had some pastry in the fridge desperate to be used up, so have made some savoury pasties with it. Still some left to freeze!

    hey, this is a really quick and easy recipie for when you don't want to spend hours cooking. it's also very healthy and you can make it out of tins and packets lying around in your cupboard. if you make up 2 day's worth it tastes even better the next day.

    low GI pasta and bean soup (roughly 2 large servings)

    you need -
    1 onion
    clove of garlic
    can of kidney beans/mixed beans in chilli sauce
    can of chopped tomatoes or passata
    1 teaspoon of tomato puree
    dried pasta
    smoked paprika powder/chilli powder

    chop the onion and garlic and soften them in a pan. add the beans and tomatoes/passata, a small spoon of the paprika/chilli powder, a teaspoon or two of tomato puree (depending on your taste), heat until bubbling. turn the heat down and add a handful of pasta for each person, throw in some boiling water to help the pasta cook, and cook until simmering. stir every now and then and add a little more water if you think it needs it. it should take around 10 minutes for the pasta to cook. i sometimes add a little maple syrup or sugar to take the edge off the tomatoes.

    the great thing about this recipie is you can add or take away spices to suit your taste. i serve it with a little grated cheese and some sweet chilli sauce.

    i have looooads of really easy stuff you can make. i'm a veggie and get dismayed by some of the recipies i see. i hate aubergine and courgette and these always seem to be in veggie recipies! i'm a bit of a mexican food addict so if you like i can post some recipies up?

    what about fresh homemade salsa, buy a pack of basic tomatoes about 5/6 in pack for 56p, 1 red onion, 1 orange pepper, chilli i normally buy a tube and use about a teaspoon, basic tortilla chips and some grated cheese. quartre tomatoes and deseed, then chop into small pieces, chop pepper into small pieces and stir fry for a couple mins, chop onion small, then mix toms, onion, pepper and chilli puree in bowl add salt and pepper to taste. put some tortillas on a plate, cover with fresh salsa and grated cheese, you can zap it in micro to melt cheese if you like. tastes great. i normally double amount and it feeds me, my hub and 3 kids for a meal. and there is normally left overs, which you can add ketchup to , to make a burger relish or maybe add a tin of toms to make a pasta sauce or liquidise to make a dip, or it will keep for a couple of days in the fridge covered. well worth a try very fresh , healthy and super tasty. also another veg recipe is potato and onion soup, a favourite with my family you can even use left over mash potato. basically boil some potatoes and a couple of white onions til soft enough to mash, drain, mash with small tub of double cream, add some milk til you get the right consistancy for you the add salt and lots of black pepper. and thats it , it tastes great, very very cheap to make, very filling and freezes well.

    I agree that quorn and soya mince can seem a bit bland - it needs a curry sauce, bolognese sauce - or some tasty stuff like marmite or brown sauce added to it - which is what I do to make a shepherd's pie with quorn mince.
    But if you want to get away from meat substitutes, I like this recipe for Butterbean curry - not really curry at all but sort of tomato taste with a hint of fruity curry! There's also a recipe for a very simple, cheap curry made with tins of baked beans!

    this is my absolute fave - it's easy, very filling and it goes down a storm whenever i have friends round to eat as you can just make a huge pan and let everyone make their own!

    veggie burritos (makes roughly 8 to 10 burritos)

    for the burrito mix -
    1 large onion
    oregano
    chilli powder
    1 pepper (any colour you like, i tend to use half a green and half a red for the colour and flavour)
    250g rice
    1 tin black beans

    pack of large tortillas

    for the extra fillings (you don't really need all, just choose whatever's to your taste. i've noticed there are recipies for salsa and guacamole above!) -
    sour cream
    grated cheese
    salsa
    guacamole

    cook the rice. soften the onion and peppers in a pan with the oregano and chilli powder. once the rice is cooked add it together with the beans in a dish, then add the peppers and onions. stir well. i'm lazy and tend to do this and then heat the assembled burritos in the mircrowave for 2 mins, but if you want the whole thing ready to eat you can add some chopped tomatoes and heat the mixture up in a pan, stirring regularly to make sure it doesn't stick and burn.

    tortillas tend to come apart easier when they've been heated a little. to assemble them i put the mix in first, then add grated cheese, sour cream and salsa. i've never quite mastered the art of wrapping them properly but it's best to wrap at least one 'end' as well as the sides to stop it falling apart. if you have a sandwich toaster they're great for sealing the tortillas - just stick the burritos on and press gently for 30 seconds.

    if i do this for a dinner party i like to do a few side dishes of nachos and fried plantain. you can get plantain from a couple of big supermarkets now but i get mine from the local asian grocers. it needs to be chopped and fried gently in a pan with just a little oil.

    loving this thread! i think i'll make the potato soup someone posted tomorrow. i'm having burritos tonight :)
