My bank is about 50 miles from where I live now.
I want to cancel a Direct Debit can you advise me if I can do this over the phone, by email or text. I would prefer the latter two as I’d have a record of the instruction

It is extremely unlikely that any bank would allow any changes to be made via either email or text as these are non-interactive and thus would have no way of carrying out the requisite security checks.
Put it this way - how would you feel if someone stole or borrowed your phone, and was then able to make changes to your bank account simply by sending in texts from your phone?0 -
If you have online / mobile banking, you can cancel any DDs on your account. Such cancellations do, however, not indemnify from notice you have to give for cancelling a contract which you pay for with a DD.1

You can do it by phone normally. Or indeed if you want a record by writing a letter and taking a photo before posting.0

All the big banks allow you to manage your DDs online. Failing that calling them up and you should be able to do it after you pass security. You could always ask them to provide written confirmation after they have done it for you over the phone.
Just keep in mind that cancelling a DD doesn't remove the need to actually pay the organisation if you owe them money - so make sure you either cancel the service or arrange an alternate payment method with the supplier.
