When I was nursing, this was standard advice - much more effective than ear plugs. I would however, cut down on hair washing. With a really good brush night & morning, you won't need to wash it for a week.

Washing her hair seperately from her bath, with her leant over the side of it (or a sink if you have one big enough), and have her holding a dry wash cloth/handtowel over her ear as you wash her hair for her?
Not going to work unfortunately though good suggestion, she has severe scoliosis and has rods from nape of neck to her bottom and cant bend like that.

Can you position a chair or similar in the bathroom (or maybe a board rested on the toilet?) so she can lay with her head over the bath, no bending needed?0

My son's ear drums perforated more than once due to ear infections and he couldn't get water in his ears either after his grommets operation.
The specialist recommended blu tack and we have used it ever since - it doesn't even fall out when he goes swimming! You have to "work" it well beforehand so it is soft enough. It doesn't go in far enough to be near the actual ear drum.0 -
I remember lying on my back on the ironing board with my head over the sink, my mum supporting my head with her hand whilst washing my hair. I suppose it depends how old she is, and how strong your ironing board is! If you could get another pair of hands to tilt and support her head, you might be able to avoid wetting the ear especially combined with some of the other suggestions.

How about one of those shampoo shields - shaped like a halo. Not sure how old your daughter is, but you may be able to adapt one. As I remember - the fit was quite tight and did stop water running down my kids faces.
If you manage to get one to fit, you should be able to avoid getting water in the ear, if you wash your daughters hair in the bath and are a careful when you rinse.0 -

From a similar experience with my eldest, I'd recommend a shampoo shield. Most chemists sell them, the adjustable type (as pictured in the link) will fit even older children.
Hope your daughter is more comfortable soon and recovers quickly.

I would also try the shampoo shield as they are very effective at keeping water off the face and as they sit above the ear then they should stop water from running in1 Sealed Pot Challenge # 1480
