Pea and gammon soup with rice or potatoes or bread. Lovely. (Pea soup is my answer to everything on this forum, check out my posts).0

rice and peas with the gammon chopped up into cubes and stirred through with any cheese you have in, no stirring unlike a risotto and i can do it in the steamer. or put in an omlette, or cook some pasta and stir it chopped small mixed with tomatoes, or pesto0

A very chunky carbonara sauce? I have just the recipe ...
CARBONARA GAMMON SAUCE
Enough for pasta for 2 to 3
INGREDIENTS
1 gammon steak
150g of closed cup mushrooms
2 cloves of garlic
1 onion
1 tablespoon of olive oil
1 tablespoon of flour
150ml carton of single cream
1 teaspoon of mixed herbs
Ground pepper to taste
METHOD
Cut the gammon steak into 2cm (1 inch) pieces. Wipe the mushrooms clean. Cut the ends off the stalks and chop them into slices. Peel the garlic and chop it into tiny pieces. Peel the onion and chop it into tiny pieces.
Put the oil into a frying pan on a medium heat. Add the gammon steak, onion and garlic. Cook for a couple of minutes until the meat is cooked thoroughly. Stir frequently to stop it sticking. Add the mushrooms, stir and cook for a couple more minutes. Add the flour and stir until it has absorbed the oil and juices in the pan. Add the cream and herbs. Season with the pepper. Stir and cook for about a minute until it has made a smooth sauce.
ADDITIONS & ALTERNATIVES
Use button mushrooms instead of closed cup mushrooms. Don’t use open cup mushrooms, as the brown underside discolours the sauce. Use crème fraîche instead of the cream.
TIPS
A dairy-based sauce like this should traditionally be served with long, thin egg pasta, like tagliatelle. However, it is also served with long, thin plain pasta, like spaghetti.
Always “take the pasta to the sauce”. Put the pasta in the pan with the sauce and stir together until thoroughly coated.
PS. Actually, having "mucked about" (albeit very slightly) with this recipe, I reckon it now sounds better than the original with just thin cooked ham. I might just get the makings for this tomorrow and give it a whirl over the weekend! The acquisition of wealth is no longer the driving force in my life.0 -
You could make a gammon and mushroom pie - some pastry, white sauce and maybe a handful of sweetcorn.0

Oooh, thanks everyone - I'm spoiled for choice for my little lonesome gammon steak now!

Here is the simplest recipe ever.
Fry gammon strips, onions and mushrooms until cooked (use oil or stock depending on healthy you want to be). Boil some pasta and stir in cream cheese (value or light), then add the gammon mix and stir. That's it.
This is lovely with a salad, which adds colour and very simple. (it works fine with bacon and without the mushrooms, depending on what you have in thesomewhere between Heaven and Woolworth's0
