What can I do with one gammon steak?

To make it into a meal for 2 or 3 people? I have one in the freezer, but I rarely cook for just one person, so I want to stretch it a bit
I was thinking of maybe some sort of pasta bake, but I am not very good at making up recipes. I have looked at the recipes on here, but haven't found anything.

Shred it into thin strips and add to a stirfry with some veg and a nice sauce, serve with either rice or noodles.
Or search for recipes using bacon (in small pieces) it'll be the same if chopped up small.One day I might be more organised...........

I thought risotto would be hard but it's not, bacon and peas risotto this would be nice in I used some pancetta I had left last time.One day I might be more organised...........

Yeah that's about how I make it. If you have any white wine left over it's nice if you tip a little in with the rice before you add the stock, then add the stock.
You just have to keep going back and give it a stir till the rice is fat and the juices are nearly gone

Another yummy thing is like a risotto but using barley instead (which is super-cheap) - just fry an onion, add in the chopped gammon and about 8oz of barley (for 3 people). Then pour in chicken stock and a splash of white wine if you've got it, enough to cover everything. Cook until the barley is soft, keeping an eye on it and throwing in more water/stock/wine if necessary. Some cheese is nice at the end, also any other bits like tomatoes, mushrooms, leeks - but add those with the gammon earlier on. Cheap and delicious.0
