Hi anotherginger,
There's an earlier thread with more ideas so I'll add your thread to it to keep the suggestions together.

I've made a dozen pickled eggs. They're in just white vinegar, with a teaspoon of whole black peppercorns. I made them two weeks ago and they won't last long. When they're gone, can I pickle another dozen eggs in the vinegar? OK, the second batch might take longer to pickle, but it just seems such a waste to throw it away. The acquisition of wealth is no longer the driving force in my life.0

stephen - they take three weeks to pickle properly! at the minimum! I did mine last month and no, I wouldnt re-use the vinegar! its nice over chips tho!0

When you pickle stuff the flavour from the vinegar seeps into the food and you are left with a pretty weak, tasteless liquid. Vinegar is dirt cheap anyway, I always throw it away in such circumstances.0

Oops! I'll be good and leave them for another week. They taste OK though. The acquisition of wealth is no longer the driving force in my life.0 -
I haven't actually made pickled eggs for a couple of years, but I will now after reading this - once all the excess Christmas food has been eaten.
I love them sliced in a sandwich, with mayonaisse as the spread.0 -
