Old pickling vinegar uses?

Can you re-use piclking vinegar?
I've got some I used for onions and it seems a waste to throw it away; if I can't re-pickle with it is there another use?
(think I'm becoming a bit weird as nothing goes in the bin now without a thorough "what else could I do with this" examination: OK but I have a very small house)

Yes,I do this with delicious but v.expensive jars of pickled shallots. When the shallots are gone I slice up cucumber and a bit of onion and pack it into the jar of vinegar.I leave it for about 4 days before eating.Store it in the fridge. This makes what the Americans call bread and butter pickles, the shallot vinegar is spiked with chilli so they turn out really good.
I got this tip from The Tightwad Gazette by Amy Dacyczyn which I thoroughly recommend.
I'm not sure if it works with onions or other veg,you may need to cook other things, but cucumber is quick and easy, and makes great sandwiches with ham or cheese.HTH0 -
I once put pickling vinegar on my chips, as someone had told me that is what the vinegar in chip shops was (i know, i believe anything!!!) and it was horrible!!!!! not sure if there would be any other uses, mine normally goes down the sink, but would love to know if anyone else does do something with it!!!!

Thanks, I like it on my chips too.
I can't think why I couldn't re-use it for pickling onions again but it just seemed wrong.0 -

Hi everyone.
I've just finished off yet another jar of pickled onoins (I just eat them like sweets. Yum!) and I just wondered if there was any other use for the vinegar that's left.
I did a forum search but not much came up.
Thanks in advance x0 -

Have the vinegar on your chips - yum yum, pigs bumSometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...0
