Porting to new iphone - help please?!

After a lot of debate, I've decided to move from Vodafone - 12 months up on 3rd July - to get myself a shiny new iphone. Bearing in mind it's released 11 July, what do I need to do? I've never taken a number with me before, but don't want to have to change again.
Do I cancel my contract? or ask for a PAC code now so they know that I'm leaving? What if stock is not available on the iphone when I go to get one?!
Any advice would be very gratefully received!
